With the devastation across Greene County, we have decided to cancel this eveningโ€™s Incredible Farm Dinner Downtown. Thanks to your support, we will donate the meals to those displaced, as well as first responders.

We hope that you support this decision as we try to help heal our community. Please join us in praying for Greene County as we all help each other get through this difficult time.

Teens have worked hard to build a new rabbitry this year and grow out rabbits for this amazing opportunity at such a low price! Join us for our Rabbit Processing Workshop on July 13th from 8:30am - 10:30am for only $40!

Learn how to process (harvest) a rabbit with minimal equipment. Participants in this hands-on workshop will humanely dispatch, skin, eviscerate, and package a rabbit to take home. All supplies are provided. Rabbits are raised on non-GMO feed. Be sure to bring a cooler to take home your processed rabbit!!

Garlic scapes

If you grow your own garlic, you've probably been told to cut off the 'scapes'. But what exactly are they and what do you do with them.

The first time our gardener brought me some scapes, they were just these buds and I hadn't a clue what to do with them. I hate to say it, but they got wasted.

This year, I got a bit more education before they were even harvested.

The scapes are the flowering part of the plant. They get cut of in order to grow bigger, more flavorful
Garlic bulbs, since the plant won't be expending the energy necessary to bloom

They are these super cute spirals when they are ready to harvest, but will straighten out as they grow.

They have a milder garlic flavor, but you wouldn't want to eat them raw either.

I did them two different ways, and we all liked them both, so give them a try.

Lemon and garlic scape pasta.

8 oz spaghetti noodles
2 cups garlic scapes, cut into 1 inch pieces
2 tbs butter
Zest of one lemon
Juice of one lemon
8 oz grated Parmesan cheese

But 8 oz of spaghetti on to boil, per package instructions.

Meanwhile heat oil in a skillet, add garlic scapes and saute for about five minutes, or until slightly browned. Add butter, lemon zest, and lemon juice to the pan, then turn off the heat.

Drain pasta, reserving 1 cup of the cooking water.

Return pasta to pot, and stir in garlic scapes, along with Parmesan cheese, add pasta water, 1/4 cup at a time, to get sauce to your preferred consistency.
