The United States has a rich history of civic engagement, and one of the unique aspects of its founding era was the role of local bars and taverns as centers of political discourse. These establishments served as gathering places where citizens from various walks of life could meet, share news, and engage in spirited, yet polite, discussions about the issues of the day. In a time before widespread newspapers and electronic communication, taverns provided a critical space for debate and the exchange of ideas, helping to foster a sense of community and shared purpose. This culture of open dialogue and civil discourse contributed significantly to the development of American political thought and the eventual founding of the nation, as ideas about governance, democracy, and liberty were hashed out in these convivial settings.
In keeping with the traditions of our forefathers, we are hosting a Brews & Ballots event this Saturday. This is not an endorsement for any political party or candidate. We believe in the entirety of the Democratic process (although if Prohibition came back, we would have some serious decisions to make 😅). If you have a group interested in hosting something similar, please reach out as this one did.
Our taproom will be open as normal. Brews & Ballots will be in a separate area. Cheers to civil discourse 🍻
Little recap from our inaugural Bike Night last week with Injury Attorney Rick Stewart, The Cigar Box, and Eric Weiler! Running it back every Thursday from 7-10pm rain or shine (dry storage available onsite for bikes). Flipside performing live tomorrow. Come join us!
The world of beer is wild and fantastic. And admittedly, can be a little complicated to understand. This weekly series is going to break down beer and brewing so that we can all better understand what goes into our favorite drink!
So let’s dive in with lesson 1: The Ingredients
Grains. Hops. Beer. Water.
It’s that simple. Or is it? Let’s break them down!
Grains: Most brews start with a malted barley, but some brews (including our own Together We Rice) are made with other grains such as rice, wheat, oats, corn, rye and more! Both wheat and barley need to be malted for brewing. That means the grain was soaked, sprouted, and then roasted, to both dry it out and stop the germination process. This ingredient is responsible for feeding the yeast, therefore is responsible for the alcohol content of the brew, as well as its color and a large part of its flavor and aroma.
Yeast: This is where we break beers into their 2 main technical categories: Ale v Lager. Ale Yeasts generally ferment at a higher temperature (called top fermenting) and Lager Yeasts generally ferment at a lower temperature (called bottom fermenting). There are hundreds of different strains and combinations to be brewed with under those 2 umbrellas. Some brewers believe this is the make or break ingredient choice to take a beer from good to great.
Hops: The magic ingredient: the flower of the Humulus Lupus plant. It has 3 main jobs: Flavoring. Bittering. Stabilizing. Usually added during the boiling stage (don’t worry, we’ll cover that next week!), sometimes they’re adding in a process called Dry Hopping. A resin in the hops called Alpha Acid is what gives beer its bitterness and the essential oils are what give each brew its distinct flavor and aroma profile. Just like most plants, there are hundreds of varieties of Hops, giving us endless flavor possibilities! The last, and maybe most important job of Hops is to help stabilize the beer. It helps create a certain antibacterial quality in the beer, helping it stay shelf stable for an extended period of time.
Water: The ingredient we all know and understand. As beer is roughly 90% water, it’s widely understood that the quality and source of your water can change the overall product of your brew. A more mineral rich water will lend those flavors subtly to the beer it creates. The ph level of the water is also an important factor brewers take into consideration.
That’s the basics on beer ingredients! There are obviously more complexities to modern day craft brewing including adjuncts, extracts, and more. But we promised the basics! Next week we’ll touch on the basics of the brewing process!
It's time for us to talk about Liquor Liability Insurance. As a brewery, we are currently okay. Should we continue down this current litigation road, it is only a matter of time until we are not.
We have been listening and engaged behind the scenes all year. This has involved trips to Columbia, meetings with advocate nonprofits, and most importantly, conversations with local business owners directly affected by the unattainable rising costs of Liquor Liability Insurance.
Why is this happening? Great question.
A law was passed in 2017 that requires establishments who serve alcohol to carry a minimum of $1,000,000 liquor liability insurance. This allows victims and their families of DUI crashes to sue businesses for allegedly over-serving alcohol to a drunk driver. Not only can victims sue the last place to serve a drunk driver alcohol, they can sue every business that person visited throughout the day. For example, if someone drank a mimosa at 11am for brunch, and then visited four other spots before heading to the dive bar at 11pm, every single place they visited throughout the day can be held 100% liable.
As you can imagine, this has become quite a lucrative business. So much so that lawyers are moving to South Carolina to take advantage of it. A simple Google search of "DUI case SC that sued bars" will show you how common this business practice is, as well as how much money this generates.
Ironically, many of the same lawyers who benefit from this law are elected representatives in Columbia.
You may have also heard buzz about "Senate Judiciary Committee reforms". South Carolina is one of two states in the country who appoints judges through the legislature (elected representatives). The Senate Judiciary Committee who screens potential judges is made up primarily of lawyers.
In response to this, insurance companies have raised their rates or pulled out of the market altogether. Additionally, insurance companies' business models rely on settlements. Cases rarely make it to court. This is what many of the venues are facing when they say "due to liquor liability insurance". Rates can double or triple year to year.
There is no legitimate argument for this. We have heard them all. The stories of families losing loved ones from DUI crashes is heartbreaking. The question still remains: "Why does a small business bear the responsibility for an adult's personal irresponsible choice?" An argument could be made if an establishment continued to serve a clearly intoxicated person, but that is the exception, not the common practice. At 21 years old, that is your decision, not someone elses.
This cannot continue. We do not need to wait. Contact your local state representative. Vote accordingly. Ask your favorite bar or restaurant how they are doing and what you can do to help. Share this post to bring awareness. Do your own research to determine if we are off base here.
Small business owners are as tough as it gets. They care deeply about the people they employ and the public they serve. Their livelihoods are now at stake because of decisions made by those who are disconnected from the struggle. We fully support small businesses in the fight against the Liquor Liability Insurance establishment.

Switching it up this week since we’re closed on July 4th. Moving trivia to Wednesday to be hosted by Greenville’s most wanted: Prison Michael.
Being able to celebrate 26 years as a business is no small feat. It is a story interwoven with thousands of different people contributing to its history. Some worked for a short period. Some worked for years on end. Some we still see occasionally. Some we will never meet again. The majority never brewed a beer, but find their way into the taproom or grocery store or local bar/restaurant to support the business one pint and one 6-pack at a time.
We have watched with sadness as many businesses have closed their doors as of late. Just last year, we were not sure of our future fate. There is no secret formula or silver bullet. In this current climate, the breweries that last are often simply just more fortunate than the others.
The important thing is that we are still in the damn fight. This crazy thing is still worth doing. And we are popping off this Saturday, June 29th to celebrate:
New Billy Ray Citrus double hazy IPA beer release!
Doors open at 11am.
Case specials all day.
Ellie Rogers Music kicks off at 3:30pm.
Adjacent Hays starts at 7pm.
26 years. Wild. Excited to meet the many people who will write our next chapter.
