ππβ¨ Get ready to warm up your fall evenings with this delicious Coconut Curry Chicken! ππΏ This comforting dish is bursting with flavor and perfect for cozy nights in. Hereβs how to make it:
Ingredients:
- 1 tablespoon olive oil
- 1 onion, sliced
- Kosher salt
- 8 bone-in, skin-on chicken thighs or drumsticks (or a mix!)
- 2 teaspoons turmeric
- 2 teaspoons curry powder
- 1 to 3 tablespoons Thai red curry paste
- 3 to 4 plum tomatoes, chopped
- 1 can (13.5 oz) unsweetened coconut milk
- 1 tablespoon fish sauce
- 2 teaspoons brown sugar
- 1/2 cup cilantro, roughly chopped (or to taste)
- 3 to 5 ounces spinach (optional)
Instructions:
1. Preheat oven to 400ΒΊF.
2. In a large sautΓ© pan over high heat, heat olive oil. Add onions and a pinch of salt, then reduce heat to medium-low. Cook until softened and slightly browned (about 5 minutes).
3. Season chicken with kosher salt (1 teaspoon per pound).
4. Stir in curry powder, turmeric, and Thai red curry paste until onions are coated (about 1 minute). Add tomatoes and cook until they soften (about 1 minute).
5. Pour in coconut milk, fill the empty can with water and add to the pan. Add fish sauce and brown sugar; bring to a simmer.
6. Add chicken, turning to coat. Transfer the pan to the oven, uncovered, and cook for 1 hour or until the chicken is browned and tender.
7. Stir in cilantro and spinach if using. Serve over rice and spoon the delicious sauce on top! πβ€οΈ

ππ Cozy up this fall with a delicious One Pot Creamy Pumpkin Pasta! πβ¨ This comforting dish is perfect for a quick dinner and packed with seasonal flavors. Hereβs how to make it:
Ingredients:
- 8 ounces linguine pasta
- 4 cups low-sodium vegetable broth
- 1 cup pumpkin puree
- 1/2 cup white wine (Chardonnay recommended)
- 2 tablespoons olive oil
- 1/2 medium onion (chopped small)
- 3-4 large cloves garlic (minced)
- 1/2 teaspoon ground nutmeg
- 1/8 teaspoon crushed red pepper flakes (to taste)
- 1 teaspoon kosher salt (plus more to taste)
- 1/4 teaspoon freshly ground black pepper (plus more to taste)
- 1 log (4-ounces) fresh goat cheese (or vegan cream cheese for a vegan option)
- 1 small bunch parsley (chopped)
Instructions:
1. Add all ingredients (except goat cheese and parsley) to a large pot or Dutch oven.
2. Bring to a rolling boil over high heat and set a timer for 9 minutes. Stir frequently.
3. When the timer goes off, check the pasta. If itβs not quite tender, continue cooking for another minute.
4. Remove from heat and crumble goat cheese into the pasta. Stir gently until melted and combined. Let sit for 5 minutes to thicken.
5. Taste and add additional salt and pepper if desired.

πβ¨ Letβs get this fall party started with these delicious Mini Apple Bites! ππ Perfect for satisfying your sweet tooth and impressing your guests!
Ingredients:
- Brown sugar
- Pumpkin pie spice π
- Unsalted butter
- Chopped pecans π°
- 1 Granny Smith apple
- 1 tube of Pillsbury Crescent Rolls
Instructions:
1. Preheat your oven to 375Β°F and line a baking sheet with parchment paper. π½οΈ
2. Arrange your crescent roll triangles on the baking sheet.
3. In a bowl, mix together ΒΌ cup of brown sugar and 1 teaspoon of pumpkin pie spice, then sprinkle it over each triangle of dough. π¬
4. Add a crunchy twist by sprinkling β
cup of chopped pecans over the dough.
5. Cut your Granny Smith apple into slices (keeping the skins on adds extra flavor!). Toss the slices in 3 tablespoons of melted butter. πβ¨
6. Place an apple slice on the wide end of each triangle and roll the dough around it.
7. Brush each mini apple bite with butter and dust with a bit more pumpkin pie spice.
8. Bake for 10-12 minutes until golden brown, then let them cool for 5 minutes.
Serve warm and watch them disappear! π₯°π
