Here is my rendition of messing with a classic flavor: Old Pali Road
First, I took a bottle of
whiskey and poured it into my chocolate ice cream base. Then I substitute roasted macadamia nuts instead of almonds, throw in some marshmallows, and there you have it! A flavor right off the just in time for Father's day!

Continuing the series with ICE CREAM! Our friend in Germany sent us a care package, which included a waldmeister flavored beverage mix. Having never heard of this flavor, I looked it up and lo and behold, it's banned, for the same reason as the Tonka beans are... high level of coumarin.
Waldmeister, translated to "Master of the Woods," is a springtime herb steeped in tradition. It has a vanilla like flavor, with an herbal, green "grassy" flavor. Even though it's commercially banned, every spring, Germans will make waldmeister treats, including , a wine punch infused with the herb. 🌿
Take a pint home and put a scoop in some sparking white wine for a treat!

When I was working at Soul de Cuba café, I learned to make helado de platano ice cream, and when the owner stopped by and asked me to make an ice cream featuring their Spicy Mojo de Ajo, I knew I wanted to use plantains. Starting with the classic helado de platano, I add a little Chino twist with Spicy Mojo Kumquat swirls! This one is named after Fidel Castro's ice cream palace: , which is in turn named after a ballet, fitting as this flavor dances like a ballerina across your tongue: Bittersweet caramel, tangy kumquat and spicy and savory garlic. Ask for a little flaky sea salt for the chefs kiss!

Did you know that Fidel Castro was crazy about ice cream? When the U.S. trade embargo cut off his ice cream supply, he demanded that Cuba create an ice cream palace that could serve 1000 people, and even bred his own cows to make the milk, and that's why it's called the !
