New Coffee alert!!
This Arara micro lot hails from Brasil, in the Cerrado Mineiro region.
Grown between 920-1150 masl, natural processed, and is mostly of the Catuai varietal.
When we cupped this coffee we got notes of dark chocolate covered raisin, and orange peel.

This big boi roasts between 600-650lbs of coffee weekly. The Loring Kestrel (Lori to us aka me) uses 80% less gas than a traditional drum roaster. It allows us to produce 100,000 less ponds of CO2 emissions into the air. We love an energy efficient big boi. 💫

Assefa and Mulugeta Dukamo founded Daye Bensa Coffee, “one of the major coffee exporting companies in Ethiopia exporting green coffee directly from its own farms and farms of affiliated farmers.”

In 2016, David Buehrer, one of our co-founders, met Assefa Dukamo’s son, Kenean Assefa Dukamo. One of his father's requests was for us to take Kenean to a different coffee producing country and we chose to visit Josue Morales in Antigua, Guatemala. Kenean was deeply interested in the dry fermentation practice and Josue walked him and his family through the process on the spot with a phone call to Sidama. That dry fermented coffee from the kebala (sub region) of Daye, processed at one of the Dukamo family's wet mills, Hamasho Station, received 8th place in Ethiopia's cup of excellence auction and was the highest rated washed coffee on the top 30 scoring list of Ethiopian coffees. In the last 3 years, Daye Bensa has ramped up dry fermented coffees and saved thousands and thousands of gallons of water in rural areas that have many complications regarding fresh water supply. 

Lil side note: We consulted pro bono with Daye Bensa in cafe design and operation on their cafes in Hawassa and Addis Ababa, Dukamo Coffee.

We continue to work with amazing coffee farms and we would love to highlight why we are honored to source our coffee from them. Beneficio Esperanza (Los Volcanes Coffee) are first up on the list.

Esperanza is a wet mill processing station with a very small farm footprint on the property. Josue Morales took over management of the station in 2013. It was covered in weeds and unkept since no one had been operating there since the price collapse of 2009. Greenway made a financial commitment to purchase every coffee produced on the property in an effort to kickstart the rejuvenation of the farm. We, along with a select few, receive the coffee produced on the wet mill property which includes varieties like Villa Sarchi and a small portion of Bourbon trees that are over 100 years old left by the original European colonizers who vacated the property. 

Los Volcanes is Josue's parent organization that is now managing farm operations in Guatemala, El Salvador, Honduras, and Brazil with a focus on water conservation using a proprietary fermentation practice Josue has coined "dry fermentation.” This practice utilizes heat as the thermal stability to control fermentation instead of water. Because of this process Josue has saved an ASTRONOMICAL amount of water, something like 98% less water than traditional fermentation procedures. All of our coffees from Guatemala are washed, dry fermented coffees. 

*Cool side note: We consulted pro bono with Los Volcanes in cafe design and operation on their cafe in Antigua — El Gran Cafe.

In Cerrado Mineiro, Sul de Minas Gerais, Brazil are two farms we are working directly with for our Brazilian coffees: Rio Brilhante and Fazenda Pantano. Los Volcanes is directly involved in both farms under management contracts. Rio Brilhante is doing botanical variety separation and will begin water conservation tests for dry fermented washed coffees in the upcoming seasons. Fazenda Pantano is the neighboring farm to Rio Brilhante, and is owned and operated by the Naimeg family. The Naimeg family are providing coffees for two of our espresso blends as well as our Fazenda Pantano single origin retail coffee.

fun fact! the brown coffee beans you know and love are actually seeds from cherry-like fruit on a coffee plant.

each cherry typically holds two seeds. in order to remove the seeds from the fruit and mucilage, the cherries will go through extensive processing — natural, washed and honey are the more familiar processes.

once the seeds have been processed, they are hulled, graded and sorted before being exported to roasteries worldwide.

we source our green coffee from .coffee, , , fazenda pantano, and coffees — all incredible farms with values very similar to ours.
