Signs, signs, everywhere signs...

Good News! Terminix has done its thing and rid our space of the flying nuisances. Over the next hours, we will be putting the finishing touches on cleaning and sanitizing our space so we can feel confident that we are providing the best baked goods in the best environment.

We appreciate your understanding of the situation, and we hope you'll make time to visit us soon!

Update to the Update: Pest control will be here today. Cleaning and sanitizing to commence shortly thereafter. Open tomorrow at 8am. Yay!

Update: Terminix got back to me yesterday, and hopefully will be able to perform services in the next day or two. Upon inspection early this morning, it appears as though the problem may solve itself due to the decrease in noticeable pests. I will be at the bakeshop today to do what I can before the pest services arrive. We will be closed today, but hopefully, we will be back up tomorrow (Friday, July 12th). I will keep updating through Facebook and Square Email Marketing! Thanks again for your understanding and support. Dave

So, hopefully, if you're a customer, you have noticed that we like to keep our place clean. We pride ourselves on that aspect of our business.
Two days ago, our landlords decided to cut down all of the plum trees around the building, and because of that, we think the flies that lived in the trees are now seeking refuge in our building. In the almost six years we've been in that building, we've had the occasional fly get in when customers come in, but nothing like the past two days. That being said, we are closing until we get the problem solved. We have contacted Terminix and are awaiting their call.
I could make excuses or lie about what's happening, but we've always been honest with our customers, and I don't see a reason to stop now.
Hopefully, our honesty in this case will not be detrimental to our business. We want you to know that we shoot for and stand by food safety, cleanliness, integrity, and the best interests of our customers.
We will keep you updated, and hopefully, this issue will be solved soon.

We also have a just-made batch of Chicken, Shrimp, and Sausage Gumbo in the cooler. Andouille sausage, simmered chicken thigh, shrimp, green and red bell pepper, okra, onion, garlic, and spices. It's got a little kick, but not too spicy. Dinner is served!

Saturday Bake Sale is Upon Us

While I was sampling/photographing today's strawberry-rhubarb galette, I found it a great pleasure to differentiate between the two key ingredients. There was the near-mouth-puckering zing of the tart rhubarb and then the smooth sweetness from the fresh strawberries. When the two collided, it was the perfect mix. Both flavors offset the other while complimenting each other at the same time. That, along with the delicate texture and rich flavor of our "all-butter" pastry, make this a true taste experience.

But please don't take my word for it. The only real way to know is to try it yourself.

I had mine with a press of my favorite Peace Coffee roast, Peru. This is a really awesome medium roast. Full-bodied and super flavorful!

Croissant Sandwich Best Results Hint!

If you buy one of our croissant sandwiches out of the cooler, do this for the best results:

Due to refrigeration, the butter in the croissants solidifies, making the croissants seem stiff. Pulling the sandwich out of the fridge 15 minutes or so before eating gives the butter time to warm and soften, in turn making the croissant much more tender and enjoyable!
