Did you know that carbonic maceration was initially developed in the Beaujolais region of France in the 1930s as a wine-making technique? Today, our longtime partner Finca Villa Loyola applies this fermentation method to coffee processing.
Carbonic maceration begins by rinsing the coffee cherries, separating them by density, and placing them in plastic containers. The containers are purged with carbon dioxide, sealed with one-way valve lids, and left to ferment intracellularly with enzymes for 72 hours. Then, the cherries are moved to shade-covered drying beds to dry as natural-process coffee.
The addition of carbonic maceration intensifies fruity aromatics and lends this natural-process coffee a juicy body with layers of flavor ☕️

☕️ Hybrid Washed: a two-stage fermentation combining elements of the traditional Natural process and the Washed process yields a cup with tropical, crisp notes of passionfruit, pear, and pomelo zest.

Mike, our head roaster, brought his son Jeremiah to spend a couple of days with us at the warehouse last week. From overseeing some roasts to spending time together in the cupping lab, it's a special treat to watch the love of coffee spread to the next generation.

High in the mountains of the Nariño region of Colombia sits Finca Santa Maria, owned and operated by our partner Armando Benavides Portilla. Since taking over ownership of the farm in the early 1990s, Armando has expanded upon sustainable farming techniques established by the farm's original owners while obsessing over harvest quality. In 2020 he shifted processing to a friend's well-equipped wet mill at nearby Finca El Paseo, but he dries the parchment coffee in special rooms at his home in Buesaco so he can keep a watchful eye on drying progress.
With unique growing conditions—including long hours of sunlight, hot springs, and impressive altitudes of over 6,000 feet—Armando's Caturra trees grow in rich volcanic soils. The result? A coffee with impressive sweetness and acidity!

Since 2021, Cafe Imports Legendary Coffee Exchange has been helping bring the roasting community together, one bag of coffee at a time. We're proud to have been a part of this growing program from the beginning and look forward to the swap every year.
This year's coffee exchange connected Mike with Lanna Coffee Co and their Black Honey single-origin! Sourced from Doi Inthanon, Thailand, this season's harvest of the Catimor varietal is an excellent representation of the Black Honey process. A light roast, this coffee was reminiscent of puff pastry with a sprinkle of sugar on top, paired with a dollop of raspberry compote.
After enjoying this coffee on the cupping table, Mike sent out a note to our new friends at Lanna Coffee Co. as another way to say thank you. Cheers to great coffee and new friendships!

🌱 We'll fill a 5lb bucket with coffee grounds and reach out to you once it's ready for pickup. It's that easy!
♻️ Then, simply bring back the compost bucket once it's empty. We'll wash it up and start again!

Roaster of the Year winners unite! ☕️
We loved catching up with so many amazing fellow roasters last week to celebrate Roast Magazine's 20th anniversary.
Since 2005, Roast Magazine has celebrated the top roasters in the world with their prestigious Roaster of the Year Award. We're honored to be considered a member of this elite group, having won Macro Roaster of the Year in 2009.

This year marked the 25th anniversary of the Specialty Coffee Association Expo, and it was nothing short of amazing. From cupping labs showcasing producers from all origins to lectures, exciting new products on the expo floor, and plenty of great conversations, the weekend was jam-packed with great experiences that we'll never forget. Our take on a classic: Moka Java brings together a natural-process Ethiopian coffee and a wet-hulled Sumatran coffee to create an earthy blend with pleasant acidity. Look for juicy blackberry and stewed plum notes with a creamy body and spiced undertones. This light-medium roast interpretation of THE original coffee blend is a great option for those who regularly drink John Brown or Flatlander.
Also new this week: the Red Bourbon varietal is known for producing a well-rounded cup with pronounced sweetness. We took a slightly different approach to Juan Diego de la Cerda's latest harvest, extending roast development for more sugar caramelization and a rich, velvety body with notes of cherry pie, roasted hazelnut, and nougat.

The numbers are in! We’re thrilled to announce that together we raised $897 for Harvesters - The Community Food Network via our Per Aspera Benefit Blend this winter season.
We'll be rounding up our donation to an even $1,000, which will help feed approximately 2,000 people as every dollar donated helps Harvesters provide two meals to those in need within our community.
