Using a beautiful masonry oven designed by Alex Chernov (Stovemasters) and built by Matt Helicke (Lefthand Masonry), Jud and Genevieve Smith bake bread for sale at the shop and at farmer's markets. A list of more places to buy our bread is coming soon! Long fermentation, hand shaping and traditional artisanal bread methods mean this bakery's bread is full of love and amazing flavor.

Pretzels!

It's Oktoberfest month and that means pretzels. Starting today, we will have pretzels on Saturdays around 12pm through the rest of September (and maybe into October for a week or two). We also will be sneaking some pretzel croissants out there (every day?) so call or stop by in the mornings to snag one of those while our pretzel making stuff is at hand.

Sharing Cart

Our sharing cart is back (the red cart). Bring your garden's excess produce that you can't possibly eat or store to share with others in the community. Anyone is welcome to take and enjoy any produce you see there. It's a great way to reduce waste and for everyone to eat like royalty. The cart is usually located either just inside the door by the counter or sometimes we put it outside by the door when the bakery gets too full. No bakery purchases or interest is required to enjoy this cart :)

No Pizza 9/14

We will be closing early at 3pm, Saturday 9/14, for an employee party, so there won't be a pizza night that day. Get your fix tonight before we take a night off. Our special for this month is a white sauce, red grapes, prosciutto, a dash of fresh mint leaves, and fresh mozzarella, asiago, romano and parmesean cheeses.

Updated Bake Schedule

We've really been enjoying our new oven and there are some big perks we've found in the past month or baking. One of those is that we have been able to bake all our overnight sourdoughs first thing in the morning before we open. It's safe to say this is great for everyone to have bread earlier.

Here's our approximate current bake schedule, keeping in mind things are slightly different day to day based on size of bake and also that we're humans.

9-10:30am:

**Bread still needs about 2 hours to cool, so we begin slicing bread around 10am and beyond :)

We tried an experiment today and got the bake done incredibly early. Everything is out of the oven now (!!!) except Pullman because they need more time to proof 🙌 🥖 ❤️ Cloudy days are especially good for bread and cookies. ☁️ 🍪

Delayed today, but it's happening :)

Baking has begun!

We figured out the problem (a sensor thought the oven got too hot yesterday and prevented it from turning on this morning). We reset it and, voilà, it works. We have croissants out now (photo is of them today!) and French breads are up next. I'll live post what's coming out as we bake today, so check our stories on Instagram and Facebook for updates. Thanks again for understanding. We're so excited to be back.

Update: update 2: after a delay, we are up and running full speed ahead. I’ll post where we’re at in stories 🙂 As of 10am, croissant and danish are all baked. We have fresh cookies and scones, quiche, take and bake pizzas, a few buns, more coming fast. (Baguette and focaccia up next)

Green light: we will be OPEN tomorrow, Wednesday 7/31. I’m so impressed and grateful for our wonderful team who managed to accomplish so much over break. We removed 37,000 pounds of brick and concrete that was our old oven, cleaned, cleaned, cleaned, fixed some things in the space and installed this beauty. She’s baking like a dream. Come grab some goodies tomorrow and get a free coffee or tea with any order (all day, 7/31).

Let's Send Off Our Oven In Style

We are throwing a big, free, pizza party tonight. Here's some details to know before coming:

When: Tonight, Saturday 6/29, 4pm-8pm ish

Where & Parking Info: This party is at the bakery, duh! We will have parking all around the building and our extremely kind neighbors at the Brimfield Store-All are allowing us to park cars in their grass lot across the street (assuming it doesn't get too wet). See map below for a visual.
Note: To get into the grass lot across the street, you have to drive all the way to the south end of the lot, where the curb disappears to get up on the grass. Please don't drive over the curb :)

What: Free pizza party for the community since this is the last thing our oven will do before it gets swapped out for a new one. As a SURPRISE, we are also bringing our baby mobile oven out of retirement for the event (complete with Harrison cooking pizzas with her), so we will have "dueling" wood fired ovens cranking out pizzas and two pizza stations (one inside and one outside) to get your munch on.

BRING: something to sit on outside (camp chair, blanket, etc.). You are also welcome to bring any fun yard games you have. We plan to put corn hole out and whatever else I can dig out of my garage.

Activities: Besides the yard games, we will also have a table inside and a table outside that's got paper, pens and jars on them. We would love if you could write some memories or well wishes down for us to keep in one jar. In the other jar, we will be collecting notes of things we wish to let go of and we will be burning all those notes at the end of the night (we won't read these, so feel free to write anything you want on them).

The Weather: We are hoping it clears up tomorrow by pizza time, but this party will happen rain or shine. Wear something to be outside in. The bakery is of course open as well, but I know we will run out of space and end up partying in the grass. It's going to be a blast.

Saturday Quick Note

Today is looking completely maxed out with orders since it's our last day before break. We will not be taking any more orders so everything will be first come, first served for our bread and pastries today. Thanks for understanding.

Remember, 6/29 (today) is the last day we're open until we hopefully reopen 7/31. We will keep our website and social media updated with progress reports and will send an email when we're reopening for sure and if we have any test breads for you to try.

We will NOT be doing drive through this time, so please come inside to pick up your order. We aim to have an order pickup counter for quick service in the morning and another checkout for picking up orders and adding on if you want any extras.

NOTE ON PICKUP TIMES: We are coming in at 4am to prep all the sweets and treats so most items should be ready first thing at 8am. Bagels, pretzels and savory snacks may come out a little after open (probably by 10am for the last items). Feel free to give us a call if you are wondering if everything is ready.

Oven Announcement

We are saying a warm goodbye to our beloved wood fired oven at the start of July and installing a new (gas) oven. This is not a decision we made lightly, but have been moving towards for a while.

The biggest factor for replacing the oven is that our current one needs major repairs that will essentially involve taking apart most of the oven, replacing the hearth and much of the arch, while also deconstructing and rebuilding part of the chimney to fix the dampers. (None of those things will be easy.) While we were exploring repairs and realizing that we would essentially have to tear the face off and destroy much of it it to rebuild it anyway, we began thinking more widely about the oven that would be best for us now, in general.

We could rebuild the oven/repair it, but we are also limited by it these days (which is a great thing!). The holidays are so fun but also crazy trying to fit in so much extra items into our limited 12 hour per day bake window. This led us to explore ovens with more capacity and we concluded that we can get a bigger capacity oven that takes up less space and went with a Polin oven (it's an Italian company). Making this decision is very bittersweet and it was more complicated than I'm describing, like, we have children and would also love more family time.

I cannot state enough how much we have LOVED baking in our wood fired oven. These years have been so incredible and we have no regrets. I would do it again. It is a wonderful way to bake bread for your community and we encourage anyone who wants to work with a wood fired oven to go do it. You can bake anything in these ovens. Figuring it all out is an art and working with wood and fire is good for our spirits.

We will continue updating and sharing fun oven history and facts over the next couple of months, so make sure to peek at our Instagram and Facebook occasionally if you find that fun. Check below for our schedule and closure dates during this time.

Closed for all of July

Because of the oven swap, we're going to be closed all of July. Please stock up early and I expect things to keep getting more busy as the month goes forward. We will announce via email and on social media when we are reopening for sure as we all know construction sometimes doesn't go as planned.

We do hope to also surprise announce some test bakes with the new oven in the last week of July, so stay tuned on social media and email for some opportunities to get goodies early (for free or a discounted price).

Fun random thing in July: We're also hoping to have a yard sale of some extra stuff we have laying around at the bakery and our house (axes, clothes, toys and lots of miscellany). Expect that to be either 7/13 or 7/20 here at the bakery. A bunch of our team will participate so there should be some awesome stuff.

We also have Genevieve's favorite: strawberry shortcake. We are making extra croissants (especially chocolate and pretzel) and will have hopefully a lot of extra more than what is listed online (first come, first served for the extra croissants).

We will NOT be doing drive through this time, so please come inside to pick up your order. We aim to have an order pickup counter for quick service in the morning and another checkout for picking up orders and adding on if you want any extras.

We have brought back the online ordering system for holiday ordering for Easter weekend. You can head on over to place your order at www.bbo-curbside.com. There are two pickup dates: Friday and Saturday, so make your selection when it asks you what "Location" you want to pick up at. (You can click the address in the upper left corner under our logo also to check the day for pickup). We will close the online orders about a day before pickup, so it's best to get your order in soon. Everything will be first come first served once we sell out online.

You will notice that not everything we make is on the preorder form. This is because we don't know what else we can squeeze in until very last minute, so we can't take orders for those items. We do plan to bake as many of our usual things as we can (snacks, breakfast items, fancy things in the cooler).

For pickup, we're planning to have everyone come inside early or later on during each day and then do the drive though in the middle of the day Saturday for the busiest times. Feel free to come inside anytime to add to your order and see what other items we have.

If you have trouble ordering online, feel free to call us 33-474-7800 and we can also assist you over the phone placing your order.

Pro tip: Wednesdays are usually pretty chill here and I'm going to be adding the most extra bread that day since we have the most room, so it's the best time to come if you want to avoid a crowd.

We are open today 9am-8pm with loads of tasty sandwiches on our focaccia. Currently our types are the Italian and the Hummus Veggie. Our Story

Brimfield Bread Oven is a wood-fired oven bakery-cafe. Using a beautiful masonry oven designed by Alex Chernov (Stovemasters) and built by Matt Helicke (Lefthand Masonry), Jud and Genevieve Smith bake bread for sale at the shop and at farmer's markets. A list of more places to buy our bread is coming soon! Long fermentation, hand shaping and traditional artisanal bread methods mean this bakery's bread is full of love and amazing flavor.
