Happy SUMMER! Just as always at this time of year, the calls requesting recipes are coming in! By popular demand, we are proud to share a few of the Goodness Gracious customer favorites...particularly those using our Jalapeno Honey. Glazed Watermelon is a signature at GG, as is the Apple Honey Vinaigrette! Our Watermelon Tomato Salad w/Champagne Honey Dressing recipe is equally as delicious. This beautiful union of summer produce is sweet, tart, and savory—the kind of salad that’s as welcome at the lunch table as it is at a cookout.
Watermelon and tomatoes are a power duo in salads; here tomatoes play an acidic counter to sweet watermelon. And the best part? All ingredients are easy to find at Goodness Gracious and your favorite grocery store!
GOODNESS GRACIOUS WATERMELON TOMATO SALAD
1½ Tbsp. extra-virgin olive oil
2 tsp. champagne vinegar (any type works fine)
2 tsp. jalapeno honey (available exclusively at Goodness Gracious)
1 shallot, sliced thin
1 tsp. ground coriander (see *Notes below)
½ tsp. kosher salt
¼ tsp. freshly ground black pepper
2 cups halved cherry or sungold tomatoes (or any tomato you prefer)
4 cups seedless watermelon, cut into triangles
1 cup fresh basil leaves (I cut mine into ribbons)
¼ cup feta cheese
light sprinkling of lime juice (optional)
INSTRUCTIONS
Place oil, vinegar, honey, shallot, coriander, salt, and black pepper in a large bowl. Mix to combine.
Add tomatoes, watermelon, basil, and feta; toss to combine. Serve immediately.
NOTES
If making ahead, wait to dress salad until ready to serve. Just an FYI, coriander and cilantro are from the same plant...but they are not interchangeable. Coriander is from the seed pods...cilantro is Spanish for coriander and is the leaf portion of the plant. A good sub for coriander is cumin...same smokey flavor...however, cilantro would be delicious in this recipe as well! Feel free to add fresh blueberries, too!
