During our extended closure last week we took on a handful of projects, including the major task of reconstructing our oven’s firebox.

The 25 ton oven is from J. Llopis of Barcelona, Spain, and was built on site by master craftsman Manual de la Rosa. It has been in service since we opened in 1995, and this was the first firebox reconstruction we’ve undertaken.

The process of cooling down a massive commercial oven that typically sits between 450-530 degrees is no simple feat. A coordinated dance of opening the flue, ports, doors, and firebox allowed us to get the oven to a comfortable working temperature after roughly 60 hours out of service. The thermal mass of this craftsmen oven is absolutely astonishing.

A few days of hard work inside the belly of the beast followed. Thankfully we kept a few replacement parts that shipped with the oven all the way back in ‘95!

When it came time to get the oven back up to temp, it required a constant and considerable amount of wood to achieve our desired baking conditions. We began the process on Saturday morning, and by Tuesday at 4am the oven was ready to go.

Thanks to all the folks who contributed to this project. It was a massive, but needed, undertaking to ensure we continue baking quality wood-fired bread for many years to come 🌾
