I started getting those egg bites from Dunkin’s and Starbucks and then realized they’re like 8 carbs. I’m only doing 20 a day so I didn’t want to give that many up.
You guys have to try these! I just made them and they’re perfect!
Heat oven 350. Use a cupcake tin. Grease each section with butter. Put one egg, salt/ pepper each egg to taste, a layer of your fav grated cheese(I used Colby/Jack) I sprinkled some cut up bacon (use ham or cooked sausage) and bake for 15 minutes! So delicious for breakfast or a snack!

It's 🌮Tuesday and this is just so easy and brilliant!
Sheet Pan Quesadillas for the non strict ketoers here🙋🏻♀️🙋🏻♀️🥤🥤🙋🏻♀️🙌
INGREDIENTS
1 tbsp. extra-virgin olive oil
2 bell peppers, chopped
1 onion, chopped
1 1/2 lb. ground beef, browned
1 tsp. chili powder
Shredded cheese
Of course use your low carb tortillas! 💕💕💕
Instructions
* Prep the oven: Preheat the oven to 425°F. Spray an 18x13-inch sheet pan with cooking spray.
* Make the filling
* Layer the bottom tortillas: Place 6 of the low carb tortillas around the edges of the sheet pan, with the tortillas hanging halfway over the edge of the pan, leaving a gap in the center. Place 1 tortilla in the bottom center gap.
* Add the filling: Evenly spread the meat mixture over the tortillas. Sprinkle with the two cheeses evenly over the meat mixture.
* Finish assembling the quesadilla: Place the last tortilla in the center of the mixture. Carefully begin folding the tortillas that are hanging over the edge of the pan, towards the middle. Place a second sheet pan on top of the folded tortillas and press down a bit.
* Bake: Transfer the baking sheets to the oven and bake for 20 minutes. Remove the top sheet pan and bake for an additional 5 minutes until the top is golden brown.
* Serve: Remove the sheet pan from the oven and allow the quesadilla to slightly cool before cutting it into servings. Serve with sour cream, salsa, pico de gallo, or guacamole if desired.
Notes
1. Don't forget to place the top pan on the quesadilla, you need it so that the quesadilla bakes and gets brown on both sides.
2. If you don't want to use beef or chicken breast, you can work well with boneless, skinless chicken thighs as well. Just make sure to cut them into small pieces as you would the breast. Also feel free to use shredded rotisserie chicken to save time.
3. Skip the protein all together if looking for a vegetarian version.

I haven’t posted in awhile but this one I just had to share… yummy low carb option!😋
1 head of cabbage cut into slices about 1/2 inch thick
1 Lb ground turkey
1/2 onion finely chopped
Olive oil
1 cup of salsa
Salt , pepper, red pepper, cumin, garlic powder, paprika and chili powder season to taste.
1cup shredded cheese
Preheat oven to 425
Lay cabbage slices on cookie sheet lined with parchment.
Drizzle olive oil , salt and pepper over slices.
In a bowl mix ground turkey, onion and seasoning.
Spread over cabbage slices.
Put salsa over top of meat and then bake for 20 minutes.
Remove from over sprinkle cheese on top and bake for another 15 minutes until cheese melts.😋

Fun way to mix it up!!
Pizza Cups 🍕
Preheat oven to 400F
Line muffin tins with thin sliced ham
Put about 1 T grated mozzarella in bottom of each “ham cup”
Add 1 t of low sugar pizza sauce
Fill each cup with more cheese
Top with pepperoni, or your choice of toppings
Bake for 20 minutes
Let cool in muffin pan

Philly Cheese Steak Casserole
1 ½ lb. Ground beef (You can use sliced beef or whatever you have)
2 Bell peppers chopped
½ Onion chopped
2 tsp. Minced garlic
1 tsp. Seasoned salt
8 Slices provolone cheese
4 Large Eggs
¼ C. Heavy whipping cream
2 tsp. Worcestershire sauce
Preheat the oven to 350 degrees.
In a skillet over medium high heat on the stove, begin to brown the meat.
When the meat is partially browned, add the onions and peppers to the skillet. Cook until the meat is completely browned and the vegetables are beginning to soften.
Add the seasoned salt and minced garlic to the skillet and saute another 30 seconds. Drain any excess grease.
Layer the beef in the bottom of a well greased 9×9 baking dish.
Top the beef with the cheese slices.
Mix together the heavy whipping cream, Worcestershire sauce and eggs in a bowl, and pour over the meat mixture in the baking dish.
Bake for 35-40 minutes until cooked through.

Chicken, Honey, Soy Sauce...How can you go wrong with this recipe I came across guys!!!
Ingredients:
Chicken
Soy Sauce
Honey
Directions:
✅️ Cut the breasts in half lengthwise to cook faster and more evenly
✅️Sear the chicken on one side for a few minutes then pour in the soy sauce and honey (measure to your liking. I use more honey than soy sauce)
✅️Sear the other side in the sauce and continue to flip every few minutes while letting the chicken and sauce sauté for about 10 minutes or until chicken is well done and the sauce thickens.
This was absolutely delicious & so easy. Takes about 15 mins total including prep! Enjoy ❤
