Need a midweek excuse to whip up something chocolatey? This luscious version by local chef Max Fanton (from Blackworth in Lititz) is full of bold Wilbur Chocolate flavor.

Chocolate Mousse
Makes 15 servings

Ingredients:
5 lbs. semisweet Wilbur Chocolate (any type—Wilbur Buds, baking drops, or wafers)
2 pounds (or 908 grams) butter, cut into small cubes
6 quarts heavy cream
4 cups plus 2 tablespoons brewed coffee
1/2 lb. Wilbur Midnight Dutch-Processed Black Cocoa Powder
1/4 lb. vanilla paste (or 25 grams vanilla extract)
One batch chocolate sauce (recipe below)

Method:
1. Pour the heavy cream into a large pot and bring to a boil.
2. Place the chocolate and butter cubes in a bowl. Pour the heavy cream over the chocolate and butter and work until smooth.
3. In a separate bowl, mix the coffee with the cocoa powder and vanilla paste.
4. Mix everything together in 1 bowl and place in the fridge.
5. While the mousse base is cooling, make the chocolate sauce.

Chocolate sauce ingredients:
½ cup Wilbur Midnight Dutch-Processed Black Cocoa Powder
1 cup sugar
Pinch of salt
½ cup water
1 teaspoon vanilla paste (or ¼ teaspoon vanilla extract)

Method:
In a saucepan, whisk together the cocoa and sugar. Add the rest of the ingredients and bring to a simmer. Cook for 2 minutes and refrigerate until cold. Ready to use.

For serving:
Once the mousse has cooled to fridge temperature, it’s ready to serve (and is best served right away).

Serve mousse parfaits in small glasses or cereal bowls. Pour a layer of chocolate sauce into the base of a glass or bowl. Fill ⅓ with mousse. Add another layer of chocolate sauce. Repeat with both mousse and chocolate sauce. Sprinkle chocolate curls on top (optional) and dust with cocoa powder.

Spring’s on, ovens off! These no-bake oatmeal bars from our friends PA Eats are a super simple way to get your chocolate fix as the seasons change.

No-Bake Wilbur Chocolate Oatmeal Bars
Makes 12–16 bars

Ingredients
1 cup butter, cubed
1/2 cup brown sugar, packed
1 teaspoon vanilla extract
3 cups rolled oats
1 ½ cups Wilbur Dark Cocoa Confectionery Wafers
3/4 cup peanut butter

Method
1. Line an 8” square baking dish with parchment paper and set aside. Leave excess paper to lift out bars.

2. Melt butter in a large saucepan over medium heat. Add brown sugar and vanilla and stir until sugar has dissolved.

3. Add the oats to the butter/sugar mixture, and cook over low heat for 3 to 4 minutes, stirring occasionally.

4. Pour half of the oat mixture into the prepared baking dish and press the mixture into the pan evenly. Set the other half aside.

5. To make the filling, place the peanut butter and chocolate wafers together in a small microwave-safe bowl. Heat for 45 seconds, then stir and heat again in 20-second increments until smooth.

6. Reserve ¼ cup for drizzling, then pour the remaining chocolate mixture over the crust and spread evenly.

7. Gently pour the remaining oat mixture over the chocolate layer, pressing lightly. Drizzle with the reserved chocolate mixture. Chill in the refrigerator for at least 2 to 3 hours. Bring to room temperature before cutting into bars.

Tip: Like any no-bake cookie, the final texture of these bars depends on how long you boil the sugar mixture. If you don’t boil it long enough, the mixture will be too soft; if you boil it too long, the bars could turn out dry and crumbly.

Wilbur Hot Cocoa
Makes 1 serving

Ingredients:
• 1 cup milk (dairy or plant-based, unsweetened)
• 1 tablespoon Wilbur Aristocrat Dutch Processed Cocoa Powder
• 1 1/2 tablespoons Wilbur Semisweet Chocolate Baking Drops
• 1 tablespoon sugar
• Whipped cream for topping (not optional)

Instructions:

Microwave milk for 1 minute or heat in a saucepan over medium heat. Add the rest of the ingredients (minus the whipped cream) and whisk to combine. Heat to desired temperature. Adjust sweetness as needed and top with whipped cream. Enjoy!
