Madai, aka Red Sea Bream, aka “The King of Fish.” It’s on the big board tonight at Mt. Fuji and is incredibly delicious. Sliced thin, soft texture, and buttery flavor. Served with the skin on and topped with green onion and fried ginger.

We’ve just received our new order of specialty fish from Japan! Chef Aaron and Chef Shannon spent the day yesterday breaking all the fish down, now they are ready to be enjoyed by the people of Little Rock! It’s been wonderful seeing so many of you feel as passionately about these delicacies as we do. So, thank you for all your support!

Big Eye Tuna at Mt. Fuji of Little Rock. Insanely fresh and delicious. But on a bigger note … I’ve had two separate family members come visit me in the past month. One from Houston, one from Chicago. Big cities, obviously. And I can’t tell you how incredibly proud I am to take them to various places in our area. I know they’ve been impressed and nothing makes me happier than to showcase our impressive and underrated food scene.

Another positive report from the new version of Mt. Fuji. Here’s the Volcano Roll. We also got the vegetable tempura, grilled shish*tos, and a house salad with that insanely good ginger dressing. I could literally do shots of that dressing.
