Brighten up your plate with our Tomato Feta Salad β a wholesome medley that tastes like a family gathering. π₯β¨π
Salad:
β’ 2 cups kale, chopped
β’ 2 cups spinach
β’ 1 Β½ cups cucumber, spiralized or diced
β’ 1 cup grape or cherry tomatoes, quartered
β’ Β½ cup Kalamata olives
β’ Β½ cup feta cheese, cubed
Dressing:
β’ ΒΌ cup Calivinegar Red Wine Vinegar
β’ Β½ cup Lodi Olive Oil Koroneiki
β’ 2 cloves garlic, minced
β’ 1 tablespoon Dijon mustard
β’ 1 tablespoon honey
Combine the dressing ingredients in a bowl. Give it a good whisk. Add kale, spinach, cucumber, tomatoes, olives, feta cheese, salt, and black pepper to a large bowl. Toss them together. Pour in as much dressing as desired and toss some more. Serve and enjoy!

This unique blend has a bold flavor with a balanced bitterness and medium peppery finish with tasting notes of artichokes, almonds, and green tomatoes. Best used for bold flavors such as grilled or roasted meats, tomato dishes, and as a finishing oil. For finishing; drizzle on soups, roasted vegetables, and pastas to add a healthy addition of flavor.
