This is 조재환 Cho Jae Hwan & 조순호 Cho Soon Ho.
They are the sweetest Korean couple & they also supply us with a lot of our 나물 (namul) for our banchan!
They harvest everything with love and care + bring me snacks (even though I tell them not to.)
Today, they surprised me with some 비름나물 (amaranth greens)!
They also bring us the 쑥갓 (chrysanthemum greens) that goes into our fish stews, as well as 열무 (young Summer radish) that becomes water kimchi, and more.

매운 갈비찜 - Spicy Galbi jjim

It takes about 2.5 days to prepare our Galbi jjim. We first make the braising liquid with over 16 aromatics and our veggie stock (consisting of allium skins, scallion ends, peels, etc).
Each order comes with 1.25lbs of ONLY center cut short ribs that we braised twice. We take the extra step to chill and skim off all of the fat from the braising liquid, which results in a clean, yet flavorful sauce that isn’t greasy.
When ordered, it is braised again and then finished with rice cakes, jujubes, carrots, mu (Korean Radish), the reserved braising liquid, and date cheong (fermented date syrup).

돼지 감자 (dweji gamja which translates to PIG POTATO) 🐷 🥔
Looks like ginger - tastes earthy, a little sweet, notes of artichoke.. but we love them for the crunch :)
Sunchokes aka Jerusalem artichokes - just cleaned really well with a brush and roughly chopped - Lightly tossed in kochujang, a little cheong for sweetness, kochugaru, sesame oil, and white balsamic vinegar.
Not a conventional banchan, but it has grown to be one of my favorites.

Got these beautiful purple napas (aka Baechu 배추) from
The most classic + popular variation of kimchi is made with Napa cabbages. Chilies were introduced to Korea in the late 16th century - so kimchi was made for over a thousand years without any chilis.
This is a 물김치 (mul kimchi) which translates to water kimchi. The natural anthocyanins (known to have antioxidant features) make the cabbage naturally purple - which translated beautifully to the kimchi.

This is a dongchimi kimchi - 동치미 김치
Traditionally a winter kimchi made with mu 무우 (Korean radish, similar to daikon) - they are harvested before the winters become too harsh in Korea.
This one has a natural pink tinge.
Light, refreshing, & delicious!
Mama grew them at her home!

곶감 "gotgam" -Korean dried persimmons are an autumn treat. Ripe persimmons are peeled, cored, and left out to sun-dry for several weeks. This natural process results in their unique chewy texture and concentrated sweetness.
