New sake!🚨 And look at that color! No not the bottle. The sake!!🤩 Introducing a beautiful usunigori sake “Cloudy Dragon” from 🤍

Usunigori means “lightly cloudy”, and you immediately notice its hazy cloudiness. In all nigori categories, usunigori has less rice sediment (which makes the sake cloudy). The taste is soft and dry, and it pairs super well with a variety of food🤤😍

This “Cloudy Dragon” (純吟 垂れ口) from Kokuryu is undiluted. Sharp and dry mouthfeel, combined with higher alcohol, makes this an incredibly satisfying sake. As a starter, as a choice for food pairing, as a closer — while it is definitely a unique one, this sake is great for any occasion🐉✨

Another new sake🚨🤩🍶 You may already know KID brand, but this is“Hon” KID (本紀土) — the essence of spirit and what they imagine the future of sake☝️

The word “Hon” means essence, like Hon wasabi or Hon maguro. What is the essence of sake for the future? One of their ideas was that more people can enjoy it, and more people can be familiar with it. They created this Hon KID with the hope that a wider range of people can enjoy the genuine goodness of sake.

This junmai ginjo is light to drink, with slightly lower alcohol (13%), yet has an authentic, full, satisfying taste. The fullness and depth of KID is definitely there, and this is perfect sake especially if you’re new to sake or if you are looking for “something our parents would both enjoy, but they’ve never had sake, and they are VERY picky”😆

Elegant. Blissful. Iconic. ✨

Made with Omachi rice (which contributes to its name “Sauvage” = wild) that they grow on their own land, this sake challenges how elegant and wild a sake can be at the same time.

Kizan Nama Genshu “Alps Homecoming” is unique and familiar at the same time. It grabs your attention immediately, then you appreciate every sip because it has many attributes that make a good sake. Made in the Alps of Nagano Prefecture at .official 🙌

It’s refreshing, rich in flavor, with a very “ginjo” aromatic intensity. A complex but smooth, round palate. Balanced acidity that makes a food pairing heaven. The feel of tart green apples and sweet coconut🍏🥥

New menu: Tuna Colatura Carpaccio✨🐟🤌

Earlier this summer we encountered this beautiful ingredient called Colatura di Alici. It’s from Italy, and is made with anchovies and salt very carefully over time⏳🥣

It’s got a lot of umami. Naturally, fresh tuna (akami) is perfect for it - and on top are shredded onions, sisho leaves, roman tomatoes tossed together with a splash of olive oil 🤌🤌🤌🇮🇹🇯🇵😘

We did almost everything with our own hands - well mostly Jun’s hands🧰 Ceiling (frame and every single panel) painted, walls painted, doors painted, everything painted, floor panels installed one by one, shelves created… in the span of two months leading up to our opening😳

It was fun. But we probably wouldn’t do it again 😅

We haven’t posted new sake for a while - as usual, we have MANY but haven’t had time to post them😅 So here we go!🍶

This sake might be new to the US, but its brewery should be a familiar name even to the sake beginners — the legendary, the one and only, 🙌

Their newest Junmai Ginjo “Easy Rider” Amane is good with fresh fish, good with grilled meat, good with fried food, stewed fish, shirako, anago, miso, cheese, pork, chicken, beef, salty, bitter, sweet, savory… you get the point💚 It’s like a magic, and it’s truly an “easy” rider🤩🏍️

📣We have three new summer sake - one already almost out, one coming in this week, one in a few weeks. On top of that, Ice Breaker Vintage is in. Ice Breaker from this season is almost here. Yeah it’s (incredibly) hot outside but what an exciting season!☀️😎🩵

Sake’s biggest ingredient is rice, and the kind of sake rice makes a lot of difference. If you need to remember one kind, and if you want to look cool, remember Omachi😆

It is iconic. It is the oldest sake rice. It is the only non-crossbred rice in Japan, an ancestor of about 60% of all sake rice varieties.

The flavor? It’s earthy, ricey, and mildly aromatic. But enough of talking. Now it’s time to drink it🍶🌾😚 (You can learn more about omachi rice on this sampler card, so you can sound cool haha)

It’s new cocktail time!!🍸🌝😎 Born out of our (fun) experiment with unfiltered nigori sake, this is truly our original. You won’t see it anywhere else… the local“Balboa Sunset”🌅🍊

We use this unique nigori sake from Hiroshima that is unpasteurized and undiluted. It’s rich, it’s fresh, it’s a liscious carnival of goodness💃 In hindsight, it makes perfect sense to match it with something sweet and tangy like orange. In a way, it feels like the most cocktail a sake cocktail can be. We could not be prouder of how it came out🍶💛
