Cataplana (Portuguese Fish Stew)

Here’s our at home recipe of the week 😊🇵🇹

Hailing from the Algarve region of Portugal, Cataplana is a savory feast of shellfish and the smoky pork sausage linguiça.

Ingredients

1/4 cup extra-virgin olive oil

8 ounces linguiça, cut into 1/4-inch slices

1 large yellow onion (about 1 pound), cut in half lengthwise and thinly sliced lengthwise (about 3 cups)

2 medium-size fresh Cubanelle chiles, halved lengthwise, seeded, and sliced crosswise (about 1 1/2 cups)

4 large garlic cloves, sliced (2 tablespoons)

1/2 cup dry white wine

1 (14 1/2-ounce) can whole peeled tomatoes, crushed by hand and juices reserved

2 cups clam juice

2 bay leaves

1 1/2 teaspoons paprika

1/2 teaspoon saffron threads, crushed

2 cups packed chopped kale

1/2 teaspoon kosher salt

1/4 teaspoon black pepper

8 littleneck clams (about 9 ounces), scrubbed

8 ounces peeled and deveined tail-on raw large shrimp (about 12 shrimp)

4 ounces cleaned small squid tentacles (12 to 15 small tentacles), rinsed

8 mussels (about 4 ounces), scrubbed and debearded

These are light-bodied white wines with a characteristic spritz and notes of citrus, green apple, and sometimes minerals. The key grapes in Vinho Verde are Alvarinho, known for its floral and minerality, Loureiro, contributing citrus and white flowers, and Trajadura, adding body and aromatics.

Douro: While best known for Port wines, the Douro Valley also produces some excellent white wines. Look for Douro whites made from indigenous grapes like Viosinho, known for its minerality and floral notes, and Gouveio, offering citrus and white pepper characteristics.

Lisboa: The Lisbon region produces a variety of white wines, often blends. Common grapes include Arinto, known for its citrus, green apple, and sometimes honeyed character, and Fernão Pires, contributing body and stone fruit aromas.

10-Minute Salt Cod with Corn and Littleneck Clams
Ingredients

4 skinless center-cut cod fillets (about 5 ounces each)

½ cup kosher salt

2 ears of corn, shucked

1 tablespoon unsalted butter
1 teaspoon freshly squeezed lemon juice

Freshly ground white pepper

¼ cup extra-virgin olive oil

Wondra flour, for dusting

20 littleneck clams, scrubbed

2 garlic cloves, minced

2 cilantro sprigs

1 thyme sprig

½ cup dry white wine

½ teaspoon smoked sweet paprika

1 tablespoon chopped parsley

Crusty bread, for serving

From Faial in the Azores. Faial is dominated by grassy meadows and seaside cliffs. This cheese is made from Cow’s milk by a local family at a dairy situated near the natural reserve of Morro de Castelo Branco. Using only milk from dairy that have sustainable agricultural and animal welfare practices, Omorro is a creamy unctuous cheese with a slight tang.

This small batch cheese is incredibly rich and soft, perfect for spreading on warm baked bread. It is made from cow's milk on the verdant island of Faial in the Azores. Cheesemaker Nuno Caldeira works with his wife Marcia and brother Rui to transform fresh milk from small local farms into this delicious Omorro Amanteigado cheese.

Similar in style to Torta del Casar, this cheese is much milder and approachable. Cut off the top and dip a knife into the gooey soft center for spreading on toast or crackers. It has a rich, creamy texture with a slight tang, and pairs beautifully with fresh fruit, roasted almonds or membrillo. Pair with a crisp Vinho Verde white wine.

Par-boil the potatoes and toss with the oil and seasoning
