It is made with layers of almond sponge cake soaked in a house coffee syrup, layered with ganache and coffee French buttercream, and covered in a chocolate glaze. Its name originates from its layers resembling the levels of an opera house.

Our very own Bloom team member, Chloe is competing TOMORROW FRIDAY in the Olympic Trials!! You may have met her working at our northstreetmsn location. Not only is she a hardworking, warm and friendly Bloom employee, she is an incredible UW athlete!! Catch competing on NBC and Peacock at 11am PT. 🙌
Field Trip #2 in the books!
Taking time with our team in this way is truly priceless to me. From the casual conversations on the road learning new and interesting facts about each other to exploring bakeries and tasting pastries together, it’s all so meaningful and strengthens our relationships in new and different ways. Chicago once again did not disappoint, it’s a city with a lot of talent, rich with culture and great bakeries. Our first stop was at in Evanston, our friend and owner Ellen was very generous in taking time to give us all a behind the scenes tour of their stunning bakery. Their bread and pastry is exceptional. We were lucky enough to be there when the canelé excited the oven! It was great way to whet our appetites for the day! Next we stopped at , an authentic Mexican bakery open since 1973!!! It was fun to grab a tray and tongs and help ourselves to the cabinets, traditional practice in Mexican bakeries. I am still dreaming of the conchas we enjoyed! Next we headed to , what a gorgeous space to relax in, I particularly loved their soft chocolate chip cookie and quiche! A quick stop to to share one of their “big sandwiches,” can’t visit Chicago without one of them, so good! Of course, we had to taste cake and was the place to do it! We had a hard time choosing, but settled on a few and particularly loved their tres leches and mango cream layer cakes, super moist and delicious! Our last stop, the new , and one of the largest Filipino bakeries in the country. We stuffed ourselves with pan de coco, Ilocos empanadas, menudo buns and fluffy ensaymada. Both field trips left us all better connected with each other, happily stuffed with pastry and super inspired to get back to work! ❤️🥐🍞✨

Sunday is Father’s Day. Forecast looks great here in Madison. Maybe we’ll see you at the bakery picking up made to order breakfast sandwiches on Monroe Street, lounging on our patio at our Northstreet location, or perhaps at the Monroe Street Farmers Market. We’ll be sure to be stocked well with pastries for all the dads in your life (and for you!) all weekend long.
Fun Drink update :: Bloom team members Nate and Scottie have created two new beverages just in time for summer. After zesting and utilizing the lemons for pastry creams, Nate felt the lemons still had life in them. He steeped the rinds with brown sugar and created what we think is a darn good lemonade, or as we like to call it, “LemoNate.” Sustainable and delicious! Scottie then jumped in and with the base of our fantastic Rishi tea offerings has created honey infused botanical iced tea creations, we affectionately named “ScotTea.” He uses the herbs from our restaurant garden. Again, you can drink it all up this Sunday at the market!
Forever grateful for this passionate team of bakers and creators who bring their best selves and focus to work each day. Bloom shines because of them. ✨💕🥐

Eid al-Adha begins on Sunday evening, Hadeel, one of our decorators, has once again shared her family recipe for Maamoul. These fragrant date filled pastries are beautiful as they are delicious. They are available all weekend while they last, starting today, Friday. 💕

Summer, my favorite season of the year! Alright, it might tie with fall. Even with the bit of rain we have been experiencing, it’s still off to a glorious start. At the bakery, we have been enjoying the fruits (and veggies) of our farmer’s labor…strawberries, rhubarb, asparagus, ramps, green garlic, and new potatoes are popping up in pastries, cakes, and tarts.
Be sure to check out the new cake offerings. The team has outdone themselves; I believe they may be some of our best cakes and tart offerings yet. A lot of work goes into developing new recipes, all of the teams get involved. Several variations are baked up and frosted to determine the best flavor combination and there is a lot of tasting involved as you can see from our photo. I am super proud of this talented team, and I can’t wait for you all to experience these new dessert offerings!
Rhubarb & Rosewater Layer cake :: tender white cake, brushed with rosewater, filled with a layer of house-made rhubarb compote and a layer of our house pastry cream, frosted with rose scented swiss buttercream. It’s light and lovely!
Chocolate Mint Layer Cake :: it starts with rich fudge, coffee steeped cake layers, and then it’s filled with ganache and layered with fresh mint whipped cream — the mint from from our restaurant garden! It’s semi-naked and perfect for summer!
Our new, and what I’m naming our “Signature Birthday Cake” :: tender white cake, layered with house butterscotch pudding and slathered with chocolate swiss buttercream. Garnished with party sprinkles. Fun, delicious and delightful!
*the preorder window for weekly cake orders closes Tuesday nights, so be sure to get those orders in on time!
Did you know you can preorder just about everything from our bakery case and bread offerings EVERY DAY? We refresh the online order site every Monday and you can preorder to your heart’s content. We do shut down the order site Friday night, but you can get your orders in Monday-Friday for any day pick up including the weekend!

Our vintage VW bus will be headed to Wingra boats on Tuesday mornings starting tomorrow! 6am-10am As the sun rises, we’ll be packing the bus with hot coffee, cold brew, and lots of fresh pastry and headed to park by the lake. It’s a very meaningful way to start the day.

PART 1 OF 2.
Bakery Field Trip to Chi-Town.
Yesterday we took the first of two field trips to Chicago. It was a Bakery Crawl if you will, this included all of our regular full time/part time staff back of house to front of house. We will be taking the other half of the team in a few weeks.
It was a great day of camaraderie, exploration and inspiration. It’s good to get out of our spaces, heads, move our bodies and work together in different ways. And of course, eat great pastry and bread! Chicago bakeries did not disappoint.
Our collective goal was to observe spaces, flow, customer interactions, and taste for inspiration. We left with full bellies and we are back to work today better for it. Cheers to field trips and hard working bakers and pastry chefs. 🙌💕🥐
