Ghost Signatures: Nelson - 6.7% abv - NEIPA hopped with Nelson Sauvin (batch 01 featuring their Bliss Process)

First of all, this beer has been a long time coming and is by far our favorite of the Ghost Signatures series thusly. I promise you it will not last long, so get it while the getting’s good. (Don’t say we didn’t warn you).
Second, we were planning on using our selected lot of Nelson Sauvin for this beer but Freestyle hit us with the opportunity to use a crop of Nelson they processed using their “Bliss Process.” Essentially they are trying to extract more out Nelson using conventional physical means. Through their research they discovered that Nelson released a ton of Free Thiols as a naturally occurring reaction to the trauma of harvest, giving Nelson the intensity that we all know and love in that hop. But they wondered whether they could cause a similar reaction to the plant by giving it some pre-harvest trauma, so, quite literally, they beat the plants a few weeks prior to harvest to incite a release of even more free thiols. There are some other nuances that I’ll save for them to explain but our first (and maybe only?) hands-on exploration into using Nelson with this Bliss Process is nothing short of explosive. This is Nelson in every beautiful way you’d ever want to experience this beer. Those of you familiar with our single hop series know how much we are able to extract from these hops and given this is already an amplified version of one of our favorite hops…we can’t say enough. So we’ll stop talking and let you do the trying.

William (batch 04) - 6.0% abv - double dry-hopped IPA
** there will be no limits on this beer to start, obviously as inventory dictates it may drop to a case limit next week **

Batch 04 is better than any of the previous batches, I’m just gonna come outright and say it. We FINALLY got to use our selected lot of early harvest Nelson Sauvin in this beer and it sets it apart from any of the previous batches with its distinct white wine/gooseberry aromatics and flavors. Krush comes in with its pure fresh squeeze OJ to give it a familiar juicification while Citra plays its steady beat of ripe mango and papaya.
This is a hoppy beer where the hops are distinct and you can taste each variety in its expressive glory. This is not one of those beers that tastes like “generic hop slop flavor” despite having some sexy hops listed on the can. These distinctive hop characteristics are why we spend so much time selecting the proper crop for our beers, and what we have become known for. We respect the hop growers and producers and want to amplify their product to our maximum capability and are so excited about our new dry hop technique that allows us to do just that.
But you don’t have to just hear it from me, try it out for yourself this week, starting on Wednesday.

This collaboration with will be ready in a few weeks and you can expect it to be crisp and clear brewed with a modern lens, so less bitter and more dank tropical with its dry hop of Mosaic, Mosaic Cryo, and our selected lot of early harvest Nelson Sauvin.
Cannot be more excited about the final product.
Tomorrow, Thursday October 24th, when we open we will be offering cask pours of Zero Dry-Hopped (ZDH) Eager to Share.
Eager, at its core, is inspired by English IPAs and contains a smattering of English malts. This cask was pulled off prior to the dry-hop and left to naturally condition at room temp with the slightest addition of sugar.
Poured via hand pull and served at a modest 50*F in an Imperial Nonic pint is an experience that is unlike any other and ONLY available at the brewery.
These casks are first come, first served until they are gone.

A fresh batch of our flagship pale ale Eager to Share!

Our most requested beer is back and we couldn’t be more excited about this batch! For the first time ever we used our new dry-hop technique to our OG beer and the difference is an explosion in hop aromatics and flavors. While not as intense as DDH Eager, this batch extracts as much out of the hops as possible while using the same dry-hop amount we’ve used over the past 5 years.
Sorry if that’s confusing, just excited about this beer!

Our burgers now feature brioche buns made fresh each week by Wave Hill Bakery. Koji-aged smash burger, Marlowe sauce, pickles, pickled red onions (to cut through the burger umami), and shredduce.

I Think I Know (batch 03) - 5.0% abv - German-Inspired Pilsner

Our third iteration of our flagship Pilsner is the closest we’ve come yet to the authentic German Pilsner. Clean and crisp German hop profile with soft and round water and German grain base to make this an every occasion kind of beer. Ripe honeydew (with rind) and honeysuckle black tea notes. We love it so much we even created a separate untappd check-in for it because it really stands out from the previous two batches.

With this beer we mashed a big stout with Oreos and boiled for hours. Post-fermentation we transferred this stout onto cookies and cream and peanut butter resulting in dessert in a glass, like a liquid peanut butter Oreo, as advertised. A portion of this beer, pre-adjuncts, was laid to rest in two very different oak casks for extended aging. This was an extremely limited run of draft and cans and not likely to ever be replicated. Available starting on Saturday.
(Disclaimer: we are not changing the core mission of Marlowe focusing on low abv, highly drinkable beers and this may be the only time we will make any of these beers)
