Nice and fresh off the new cocktail menu, introducing: No Name Yet 🍸✨
The Melon Habanero Mint agua fresca cemented itself as a classic at the food truck so we decided to anoint this gorgeous drink with a kiss of tequila and add her to the cocktail menu.
This magical elixir is an enchanting dance of flavors where the sweet embrace of ripe melon intertwines with the fiery passion of habanero. A whisper of fresh mint lingers, evoking a cool, midnight breeze under a starlit sky. All this magic is harmoniously blended with the smooth, agave-kissed essence of Teremana Blanco.
Fun fact: calling it No Name Yet was a printing error accident on the new cocktail menu, but the name has stuck so we’re rolling with it!

Big news yall! We finally started operating at our new location but we’re still sorting out the details!
We’d love to host everyone and anyone but it’s a whole new ball game so we’re taking it slow and only going to accept reservations for tonight and tomorrow! We will take walk ins but I do want to organize things through reservations for now

This picture always makes me feel some way. Its crazy how much time has gone by since then. I wish I could go back in time and tell that Diego, “it’s going to be a wild ride”.
Although these 4 years have been crazy, I have a good feeling this next chapter of Diego’s Food Truck is going to be filled with more adventures and challenges.
I never imagined leaving the food park but I think the time has come to move into our forever home.
Next week will probably be our last week at the food park, after that will be closed for about two weeks until we finalize all our menus for the new location on pecan.
The other pictures are some of our experiments we ran with during our first few weeks at the food park. It really blows me away how much delicious food has come out of that food trucks’ window.

On Saturday we’re hosting our first cooking class of the year! We’re going to make it super fun serving up our classic Diegos dishes! It’ll be a 5 course cooking class and drinks will be included! There are 10 available spots for the class so RSVP as soon as you can! Classes will be $60 and they last about 2 hours
On Sunday, we’re hosting a yoga brunch at from 11 am to 4 pm! We’ll have an open mimosa bar and an open taco bar available for everyone participating! Please rsvp so we can get a head count. The Sunday session is $70 and we’ll stop taking reservations on Saturday😁
Tonight is also paella night at and I’m going to have some complimentary awesome beef bones for all our amazing doggie customers!
Today is totally paella night at but I also want y’all to know that is an extremely dog friendly establishment 🐶 I love my customers but if you bring your dog to the truck they are definitely given priority🐶
Our special pup guests get their very own cup of water and a fresh unseasoned half cooked 5 oz beef patty so that they can enjoy their own food truck meal while you enjoy yours
So bring your pups along for dinner if you come to the truck any day of the week!
Tomorrow on December 10th from 6 pm to 8 pm I am hosting another cooking class where I teach y’all how to create 5 awesome dishes that I prepare at home or at the food truck!
