Both of these recipes are the bomb 💣

Honey Chipotle Chicken and rice bowls:

2lb chicken cubed
1T olive oil
3T Honey
1/2t garlic
1/2t ground cumin
1c Corn kernels
1 avocado
1 jalapeños, seeds removed, diced
2c white rice cooked
1 chipotle chili in adobo sauce with about a table spoon of sauce
Lime juice
Cilantro

Mix chicken, olive oil, honey, garlic, cumin, chipotle and sauce, cilantro, salt and pepper in a bowl. Cook until done.

In a separate bowl mix corn, avocado, jalapeños, lime juice together.

Makes enough for 5 lunches: 1/2c cooked rice, 1/5 of the chicken mixture, 1/5 corn avocado salsa.

Total calories: 320 carb:24.1g, fat: 10.8g, protein: 37.7

Honey Sriracha Chicken:

2lb cubed chicken
2T sriracha
1t apple cider vinegar
2T honey
2t sesame oil
1T green onion
1t sesame seeds
1 1/4 cooked white rice

Mix chicken, sriracha, vinegar, honey together. Heat oil in a pan cook chicken until done. Set aside, mix in green onions and sesame seeds. Place 1/5 chicken mixture and 1/4c white rice.

Total calories: 318, Fat: 7.1, Carbs: 19.1, Protein: 42.1g

1tsp olive oil
Salt and pepper to tast

This is your reminder that you don’t have to own the perfect thing, buy the exact set as that influencer you follow, wait until you go to the right gym, etc. If you are determined to do a thing, nothing can stand in your way. This is my coffee table that 2x a week I carry from my living room to my sunroom where I work out. I throw my foam mat on it and it becomes my bench. You can do this. Live set apart

If you love fruit and having something sweet and tasty to dip it in, this is for you! I used blueberry cheesecake protein powder but you could substitute it with any of your favorite protein powders

One of my new favorite dinners are omelettes. They are so easy to make, high in protein and I can switch up what I’m adding in them. This was dinner tonight:


2 whole eggs
4T egg white
28g shredded low-fat mozzarella
14g bacon crumbles
1 green onion diced
30g black olives
30g sour cream
40g salsa

381 calories
34g protein
6g carbs
24g fat

First things first! It’s hard to know where you’re going if you don’t have any sense of the direction you want to take. Fat loss is hard! Truthfully, more days than not I don’t FEEL motivated to eat healthy or work out. I am an emotional person so one day I might feel excited about how far I’ve come and the next I couldn’t care less I just want ice cream 🤣 When I set goals before starting something it lets me base my decision making on my goals rather than my feelings. I can promise over the next 6 weeks I will FEEL like I’ve been working hard and deserve some sweets, I will FEEL like I don’t want to eat what I meal prepped, I will FEEL like I’d rather sleep in than work out. But when I have a goal, I can look at the tortilla chips at the restaurant and decide if it fits my goals or not, not base that choice on my feelings at the moment. I will chose to set goals and be intentional. I will be set apart.

I have an event coming up in a few weeks that I am very excited for and want to look my best! Even though it’s a little out of my comfort zone to be so open on a social media platform I thought what better way to hold myself accountable and show people in real time how to navigate fat loss/muscle building. I have track meets, out of town tournaments, friends, family, life over the next 6 weeks and it’s going to mean some flexibility and some sacrifices but by being intentional it can be done! I will show the wins, losses, tips and tricks along the way. I will choose to be vulnerable. I will chose to be focused. I will chose to be set apart.

Today is one of those days! Appointments all day, running from one place to the next, I’m sitting in my car right now eating this protein bar as I wait for track practice to end so I can head to the next lol. On days like these the old me would justify Starbucks in the morning, fast food or options that weren’t really fueling me all day and then I would feel terrible but think “What choice did I have? I’m just so busy!”
Truth is…I’ve known all week today would be this way. I had a busy day planned, it happens. The difference is I prepared for it by tracking out my day and packing food with me. It takes the anxiety, hunger, stress, frustration and frankly excuses away from me and instead provides me with control, satisfaction, energized to handle the busy, and most importantly, proud of myself for not being a “victim” to my busy. I will choose to make intentional decisions. I will choose to be set apart.

This is my favorite recipe for when I have a sweet tooth!! 150g of fat free Greek yogurt, (you can buy these individual cups to make it easy) and about 8g of sugar free cheesecake pudding mix. Mix it together and 🤤 110 calories 12g carbs 0g fat 16g protein and sooo good!!

Biggest thing I’ve learned along the way….there is no right way to work out it just has to fit your life. Own your fitness. If you like to bike, swim, lift weights, dance, walk do it! Just move you body. And move it where ever you can. I love the gym but being a mom, wife, working full time, I constantly had barriers and reasons why I couldn’t go. So I built the gym into my life and home. I started small and I incorporate as I learned but I no longer had an excuse of not fitting it in. Be intentional with how you care for your body. Be Set Apart

On the road this weekend but I have a big goal I want to hit next weekend so I need to keep it in check. Tracking is harder while traveling so I don’t always hold myself to counting calories but I focus on filling with high protein option like tuna, hard boiled eggs, yogurt and protein shakes.
