Caprese Panzanella Salad is a Tuscan and Umbrian chopped salad of bread, onion and tomatoes. We add mozzarella because we love cheese!
This salad, typically a summer dish, we bring to you year round during lunch. This dish is centuries-old that can be traced back to the Middle Ages with a dish that artist Boccaccio called “pan lavato” - washed bread. Old mariners of the Tuscan and Ligurian coast used to dip their bread (often dried to make it last long periods) in the sea to revive it and season it before adding it to their meals.
We don’t dip our bread in the sea …. We allow the juiced from the tomatoes to soak into the bread for this delicious refreshing salad.
