The most widespread belief on the origins of pizza Margherita claims that on 11 June 1889, it was the chef Raffaele Esposito who devised this delicious dish, which later became an emblem of Neapolitanity in the world, in honor of the Queen of Italy Margherita di Savoia.
He would have been the one who dedicated a pizza to the queen herself, from which that pizza took her name. For the specific occasion, Esposito prepared it using the ingredients that were available, ingredients with the same colors as the Italian flag: basil for the green, mozzarella for the white and tomato for the red. The phenomenon of pizza, despite the great success, remained limited to the Kingdom of Naples. In order for it to cross the Neapolitan borders, with the birth of the first dedicated premises, it was necessary to wait for the early 1900s. According to other sources, however, the pizza Margherita was born in Naples much earlier, between 1796 and 1810.
However, everyone agrees unanimously on something: Pizza is not a food, it is the essence of happiness. A universal dish, that in its "bright colors and its scent, seems to summarize our country's joy of living".
