Instructions:
▪️ Prep the Potatoes: Boil the baby Dutch yellow potatoes until tender, about 15 minutes. 🥔 Drain and let cool for 5 minutes.
▪️Crisp the Bacon: Preheat the oven to 400°F. Line a baking sheet with parchment paper, place the bacon side-by-side, and cook until crispy, about 15 minutes. 🥓 Once cooled, chop into small pieces.
▪️Smash the Potatoes: Generously butter a muffin pan 🧈 and place one baby potato in each holder. Use a glass to smash the potatoes thoroughly, opening them up at the center. 🥄
▪️Top and Bake: Melt the butter and mix with sour cream. 🧈🥄 Pour the mixture over each potato. Top with shallots, bacon, and sharp cheddar cheese. 🧀 Bake at 350°F for 20 minutes. ⏲️
▪️Finish and Serve: Garnish with chives and a sprinkle of coarse salt before serving. 🌿🧂
