Are you looking for a perfect remedy for the Below Zero Blues? Try this heartwarming healthy version of Shepherd's Pie.
Shepherd's Pie, Lightened Up *
Potatoes:
1-1/2 lb. Yukon gold potatoes (peeled, diced)
3/4 c. chicken broth
2 T. reduced-fat sour cream
salt and pepper
paprika
Filling:
1 lb. 95% lean ground beef
1 t. olive oil
1 medium onion (diced)
1 celery stalk (chopped)
2 cloves garlic (diced)
8 oz. mushrooms (diced)
10 oz. frozen mixed vegetables
2 T. flour
1 c. fat-free beef broth
1 T. tomato paste
1 t. Worcestershire sauce
1 t. fresh rosemary leaves (chopped)
1 t. fresh thyme leaves (chopped)
kosher salt and black pepper (to taste)
Instructions:
1. Preheat oven to 400 degrees.
2. Boil potatoes in a medium pot of salted water until cooked and soft.
3. Drain and mash with chicken broth, sour cream, 1/2 t. salt and pepper, set aside.
4. Meanwhile, heat a large, deep skillet over high heat and brown the meat, season with 1 t. salt and pepper to taste. Cook, breaking the meat up with a wooden spoon as it cooks, about 5 minutes. When cooked, set aside on a plate.
5. Reduce the heat to medium-low, and add the oil, onion, garlic, mushrooms and celery and sauté on medium heat about 5 to 7 minutes, until the vegetables are tender.
6. Add the frozen vegetables, tomato paste, Worcestershire sauce, rosemary, thyme and cooked meat. Mix well. Whisk together the beef broth and flour, then pour over the meat. Cover and simmer on low about 8 to 10 minutes, until the meat is tender.
7. Spread the meat on the bottom of a large casserole dish. Top with mashed potatoes and sprinkle with paprika.
8. Bake 20 to 25 minutes, then place under the broiler 1 to 2 minutes, until the potatoes turn golden.
9. Remove from oven and let it cool 5 minutes before serving.

We taste-tested this recipe at the office, and all three of us gave it a thumbs-up! My only suggestion is to let the pineapple thaw for five minutes before mixing. It gave my food processor quite the workout!
Pumpkin Spice Dole Whip *
Ingredients:
- 1 c. peeled and chopped sweet potato, cooked and cooled
- 1 3/4 c. chopped frozen pineapple
- 2 T. maple syrup
- 2 T. coconut milk beverage
- 3/4 t. pumpkin pie spice, divide
- Chopped pecans and/or coconut chips for garnish ( optional )
Instructions:
1. In your high power blender or food processor, puree the cooked potato, pineapple, maple syrup, coconut milk and 1/2 t. pumpkin pie spice until smooth.
2. Divide the Dole Whip between four bowls. Sprinkle each serving with the remaining pumpkin pie spice, and top with pecans and/or coconut chips, if desired.

For all the health benefits and all the festive fall flavors, try this Pumpkin Spice
Latte recipe. *
- 1 c. coconut milk
- 2 T. cooked organic pumpkin puree
- 1 T. maple syrup
- 1/4 t. pumpkin pie spice
- 1/4 t. vanilla extract
- 1/4 c. organic brewed coffee or espresso
1. Heat the coconut milk in a small pot or tea kettle.
2. Add the milk and remaining ingredients to a blender, blending until well-combined.
3. Pour into a mug and sprinkle extra pumpkin pie spice, if desired.
4. Serve and enjoy!
