🐖 It’s argumentative whether the crispy pork belly originated from Chicharrón from Spain or Siu Yuk from China. But Chinese immigrants introduced this yummy, juicy, and crispy style of pork belly in Thailand. SATISFACTION.

☀️The ancient summer-ready Thai dish that’s still a mystery where the name and the flavors are influenced.
🐟Coiled rice noodles (“kanom jin”) are eaten throughout Thailand and are often a substitute for rice. At Kru, they are served in a refreshing chilled sauce of coconut cream and coconut sugar, accented by thin pineapple slices, seasonal citrus, crushed dried prawns, fish sauce pickled chili, and housemade fishcakes.

🌶️ In Southern Thailand’s “Gorlae” style, a paste prepared with chilis, shallot, garlic, and coconut cream is slathered over the sablefish and then gently grazed. The paste dries and caramelizes. The fish is then dipped in a curry sauce, imbued with a smoky note.

🐠RED CURRY-RUBBED HALF BRANZINO IN BANAN LEAF
✨ ”ngohp pla” งบปลา
🍃coconut, chili, grachai, lemongrass, shallot, basil, dill, egg
⚓” Ngohp” was mentioned in the ancient food literary work by King Rama II, representing a cooking method using coconut milk and curry paste wrapped and grilled in banana leaf. It is adapted from “how mok,” a famous central region steaming dish coconut-curry custard.
🥥Chef Ohm has lifted this dish from his old version by elevating the cooking technique, highlighting the branzino, and still keeping the root of Thai style coconut-curry flavor.
