Meet Joe Swick
@ Tørst
Tuesday, October 22nd, 6 - 8 pm
What are the key influences in the wide-varying expressions of Columbia Gorge & Willamette Valley Pinot Noir, respectively? How bout those Dijon and Pommard clones, what’re their stories? Did Wood 𝒓𝒆𝒂𝒍𝒍𝒚 drastically underestimate the impact of social distinctions predicated upon wealth, especially inherited wealth?
The answers to all these questions and many more this coming Tuesday @ Tørst! Plus a full spectrum of tasty Swick wines!
Cheers!

OYSTER WEEKEND @ TØRST
8/9 - 8/11
“Dreams of Yesterday” by and recently dropped, and not a moment too soon
From Friday (8/9) noon to midnight Sunday (8/11) we’ll be offering $3 stanges of this crispy oyster shell lager along with Greenpoint’s finest oysters on the half shell from while they last
No better time of year to shoot back a dozen bivalves with this special saline pale lager, so join us!
A few words on the lager and the Billion Oyster Project from our pals :
“Dreams of Yesterday (is) a Pilsner brewed with oyster shells. If you haven’t tried this beer yet, don’t jump to conclusions—it may sound unusual, but there’s a method to the madness. To clarify, the beer doesn’t have a ‘fishy’ taste. We only use the oyster shells, which are thoroughly cleaned before being added to the boil. This process adds a touch of salinity and a refined minerality, enhancing the mouthfeel and drinkability, creating a bright, refreshing beer that’s truly unique.
Dreams is one of our brewers’ favorites to make, not just because it’s an intriguing concept lager, but also because we get to work with and the who has restored over 122 million oysters to New York Harbor, fostering biodiversity, filtering water, and serving as natural storm barriers. PS, proceeds from all sales of this beer go toward BOP for the fifth consecutive year.”
Cheers! to the pairing of our Dreams

OPEN FERMENTED
“…let it be noted that open fermentation is not without charm. Many brewers have found themselves enjoying the Zen-like collection of floating islands of yeast off the surface of a vat of beer, deftly using a specially made slotted paddle to lift the thick foam. For brewers, such ancient practices tend to make for pleasantly quiet moments in often hectic days.”
- Paul KA Buttrick & Garrett Oliver, from their definition of “Open Fermentation” in “The Oxford Companion to Beer”
Join us 6/21 - 6/23 for a weekend of many open fermented delights from the great Zillicoah Beer Company
