PORCHETTA ROAST - Vincent's Meat Market The Porchetta is one of the most iconic dishes of Italian culture. We start out with boneless pork belly and stuff it with a boneless loin of pork, season it with salt, pepper, garlic, rosemary, breadcrumbs, paprika and a pinch of red pepper. We then tie up the roast with butchers twine.

20 years of seeing the same images, watching the same videos, reading the same words. You hear "Never Forget".. but who ever could? Every time our eyes are set on those images, videos and words, a rush of emotion fills our bodies. It's more than 'never forgetting'... it feels like we're just seeing it for the first time, no matter how many times we've seen it. Even if we wanted to, it's impossible to forget that day.

What seems to really have been forgotten is September 12, 2001. The day where everyone loved each other. The proudest day to be an American. A day where hope and love filled our hearts. None of us were strangers. It's hard to imagine, but there was actually a time where America came together to pull each other out of the dust. Let's get back to that.
