Coqui the Chef has some interesting children's culinary programming. Coqui partners with organizations who share the mission to improve resources on low-income communities where healthy food is not readily accessible and where residents often suffer from high rates of diet-related diseases like diabetes, obesity and asthma.
A creamy sauce with no cream or cheese - I wanted an alfredo sauce but without cheese so I decided to blend a few mangos and avocados with a jalapeño to create a creamy sauce. I pan seared shrimp and asparagus in a mango sauce and tossed it all over baked spaghetti squash. Very tasty and yet healthy.
