Featured from the menu: Canard à la Kriek made with duck, cherry lambic, brussels sprout, and turnip.

This is Chef ‘s twist on the traditional Belgian Dish 🇧🇪 originally made with rabbit and called Lapin á la Kriek. Composed of lean rabbit meat, it is typically served in a sauce made with Kriek, a sour lambic beer flavored with cherries. 🍒

At Temperance this dish is prepared with duck breast and a sauce made of roast duck stock, reduced, with cherry lambic and cherry juice, then thickened with a luxardo cherry purée. It is served with roasted brussels sprouts and Japanese turnips tossed in a vinaigrette with a cherry vinegar base. 🍽️

Belgian Mustard? Immediately yes. ✅️

We love our food & wine with a side of history and this Mustard and Pickle Lilly take us all the way to Gent, Belgium. 🇧🇪

Both of these delicious jars are from Tierenteyn-Verlent, where mustard is the cornerstone of their operations since 1790. With only a handful of specialties, mustard reigns supreme and is crafted uniquely in their basement, pumped into wooden barrels, and hand ladled into jars with care. 😱 The secret behind its unparalleled flavor? A mystery. 🌟

Another popular item is the Belgian Pickle Lilly, the original star ingredient of the steak tartare.🍴

The Tierenteyn family emerged as the city's mustard giants during World War II. While other branches have faded, Tierenteyn-Verlent remains the sole torchbearer, keeping Ghent's mustard tradition alive and thriving.

All of these bottles (except the last one on the right) are “Trappist Beers” and are brewed by or under the supervision of Trappist Monks in their monasteries. 🍻

Trappist breweries are not intended to make profits and in fact support the Monks and the monastery grounds while the remainder is donated to charity for social work and to help people. 🙌🏽😇🫶🏽

🍺The Westmalle Brewery dates back to 1836.

🍺The Chimay Brewery dates back to 1850.

🍺The Orval Brewery dates back to 1931 (evidence dates back to 1628).

🍺The Triple Karmeliet is not Trappist but has origins in 1679 related to a Karmelieten abbey in Dendermonde.
