Back in our produce department, it’s Square Roots with delicious, fresh mixed greens and herbs grown in modular, stacking hydroponic farms that allow them to grow the produce close to market using far less land and water than conventional farms! Grown in Kenosha, WI, these greens travel only 59 miles from where they are packaged to our shelves.
Try this: Square Roots spring mix, a Jake's Country Meats bacon crumbled on top, a smattering of roasted sunflower seeds, thinly sliced red onion, and - we know it’s a bit unconventional to some, but trust us – sliced Mick Klug Farm strawberries. Serve with a simple honey Dijon vinaigrette and thank us later.

Today we celebrated the opening of our newest climate-controlled local farm in Shepherdsville, KY, with our partners Gordon Food Service! We’re so proud of this farm, and of the folks who got it up and running. Kentucky, we’re excited to be growing here!

This is our fifth farm in partnership with Gordon Food Service, helping us bring fresh, local greens closer to more tables in Kentucky and nearby states. A fresh start to the week.
Farming responsibly means keeping an eye on today’s crop, and another on the horizon. Our initial carbon accounting with Watershed revealed that we emitted 4,747 tonnes of CO2e in 2021.
While it’s a small fraction of the world’s total emissions, at the equivalent of 2,000 round trips across America in a family sedan, it’s still too much for our tastes. We’ve aligned our climate goals with the Paris Agreement: to halve our emissions by 2030, and to get to net zero by 2050.
It won’t happen overnight, but it’s important that we work towards this. Farming in cleaner, smarter ways gets us all closer to a more sustainable, vibrant, and delicious tomorrow.
One of our favorite things about the way we farm: our produce is incredibly fresh, and stays that way for weeks. ✅ Which means more delicious meals, and less spoilage and wastage. (BTW, keep your basil out of the fridge to keep it at its freshest! 🌱)
Making indoor farming truly environmentally sustainable also means looking at how those farms are built. 🌱Our first few farms were built from repurposed shipping containers, but now we’re totally redesigning them (and sourcing new, climate-smart construction materials) with our friends at Via Chicago Architects + Diseñadores. 🛠️🌎💚

We’re excited to finally announce two new additions to our lineup of salads! First up, our Crispy Leaf Mix has a crunchy, satisfying medley of textures, accented by kale, mizuna, and cabbage micro-greens; it will add subtle flavor to virtually any salad recipe and dressing you choose. The Arugula Mix, meanwhile, is robust and zesty, a complex, full-bodied blend of baby arugula and micro-greens that is bold enough to stand on its own (really), but also perfect for savory salads and bowls. We especially like it with Mediterranean-inspired recipes!
Both are available now in select stores served by our Kenosha, WI and Springfield, OH farms (you can use our store locator in bio to find us in stores near you) - and we hope you’ll try them!

Our Kenosha operations manager Hank been gardening since he was a kid in Korea. He moved to Miami to study hotel management, and found himself running a midtown community garden. From there, he ran restaurants, where he’d garden on the patio. Hank’s love for greens led him to Square Roots, where he helps get quality produce to our customers, all year round. “As a former restaurant manager, it’s mind-blowing to me that we can grow the freshest, most aromatic basil in the middle of winter.”
