We’re in full summer camp mode! Chef Justin demonstrates sushi rolling, the campers guess the ingredient, some tasty and some not-so-tasty! We’re having a great time and who knows… maybe this is just the beginning for some future hospitality managers!

One of the exclusive wines featured at our dinner on May 10th will be a pre-release of the Spottswoode Estate Cabernet Sauvignon '21. Receiving 99 points from The Wine Independent and James Suckling, we are honored to pour some of the first tastes of what will surely be a wine to savor! Vita Nova was honored to host Chef Robbie Jester in our kitchen as part of the UD conference this weekend. He and his team demonstrated a delicious Fettuccine and Chicken Alfredo. The students took away some helpful cooking tips and meaningful encouragement to be intentional and hospitable leaders.

Our spring semester is off to a great start! The students are working hard and creating delicious dishes, like our potato leek soup, for our guests to enjoy!

Our Aramark scholars are students who display excellence in service, teamwork, integrity, and leadership. They intern at Vita Nova as assistant managers and sous chefs. These two have been a wonderful support to our students, always ready to help and answer questions, and making us laugh every evening. We appreciate you, Brandon and Cooper!

Private events offer a chance for our students to practice all aspects of the planning, presentation, and ex*****on of a catered fine-dining experience. This semester they worked with the Wilmington Club to host two wine dinners featuring Chateau Talbot. They also prepared and served the Annual Board of Trustee's Dinner for our University esteemed.

Vita Nova is delighted to be partnering with the Wilmington Club and the venerable Château Talbot collection of wines, as presented by M. Jean-Louis Carbonnier.

We invite members of the University of Delaware along with the local community to our dinner on the evening of Thursday, 28th of September 2023. We will offer a multi-course tasting menu to our guests, which will be paired with the wines of Château Talbot, and be prepared and served by our Hospitality Students in Vita Nova Student Operated Restaurant Lab. Our students are engaged in their BS in Hospitality Business and Event Management, and this will be an excellent educational experience for them, while offering a superior showcase for our attendees to enjoy a specially curated selection of wines with tasting notes from M. Carbonnier.
