Soup Dogg is a combination of pickup and delivery. Starting out small, with just my dog and myself, we will provide a stress-free meal option.
I hold a masters degree in nutrition&dietetics and focus on whole food nutrition with all my soupy creations!
Had a lovely time catering the Greater Newport Chamber of Commerce Luncheon at the Performing Arts Center this week! It was great to hear some of the cool things happening in our community including the new, FREE to use, all-terrain mobility track chair for those experiencing mobility challenges at the beach. This is thanks to the Newport Parks and Recreation Department partnering with the David’s Chair Program. Very Cool! Brava 👏
On the menu:

-Chicken & Wild Rice Mulligatawny (Indian curry based soup, adopted by UK culture and featured on Seinfeld- this soup had leek, carrot, apple, celery, lentils, coconut cream, Oregon grown wild rice all simmered in rich chicken stock)

Samosa Soup (Vegan, Gluten-Free)
Taking advantage of a creative license here, this soup is influenced by Burmese and Indian cuisines- specifically the flavors and textures of the beloved samosa. In Myanmar (formerly Burma), there is a popular soup often sold on the street called Samusa Thouk which this soup’s construction is directly inspired, however instead of a samosa to dip in, I have chosen to deconstruct it (with some additions). Featuring tender potatoes, roasted cauliflower, peas, a mixture of dal (split pulses i.e. legumes), onion, roasted garlic, and ginger swimming in a rich house-made vegetable stock infused with powerful spices- (paprika, coriander, cumin, mustard seed, fenugreek, turmeric, curry, bay leaf, red chili). Topped with a colorful medley of shredded carrot, cabbage, and fresh cilantro, each spoonful is a burst of flavor. Served with a side of basmati rice and a crisp pastry (contains wheat, dairy free) reminiscent of a samosa crust, and accompanied by house-made tamarind date chutney for the perfect balance of sweet and tangy. This soup is fun and so full of flavor- it does bring a little bit of heat but can be tempered with the rice and toppings.

Golden Chicken & Four Bean Soup
(Dairy-free, Gluten-free)
🥣 Think ham & bean soup meets chicken chili with a golden touch of turmeric✨ ! Why four beans you ask? Well to symbolize the four-year cycle of the Leap Year of course! These four beans complement the chicken (no ham, or pork products used) to add depth, texture and of quite importance, fiber!
LEAP into this savory blend of roasted chicken and garlic stewed in house made chicken stock (no soup bases used here) with onion, carrot, celery, orange bell pepper, green cabbage, roasted radish, tomato, and a medley of herbs and seasonings including a pinch of turmeric. All four bean varieties (pinto, red, black, and great northern beans) have been cooked in house as well (a big part of why this is being sent late!).
🍞 Each order comes with a freshly baked and fluffy dinner roll (1 for pint, 2 for quart), perfect for sopping up a bite. For those with dairy- and/or gluten-free dietary restrictions, there is the option to substitute rice.

Creole Gumbo (Gluten Free)
with Shrimp, Chicken and Andouille Sausage
I am sure no one here has had things not go according to plan 🙃 Well, I meant to get this soup out earlier in the week but it really was just one of those weeks!
In light of Mardi Gras, I set out to make gumbo. Now gumbo is all about making the roux- a dark roux that comes from constant stirring on low heat for about an hour with a wooden spoon. Now, I have made this before with gluten free flour but this time turned out a bit problematic for whatever reason. Many renditions of roux’s later, here we finally are! This creole gumbo features shrimp, andouille sausage, chicken, okra, tomatoes and of course the vegetable holy trinity: onion, bell pepper and celery. All of this simmered with loads of garlic, fresh herbs (including oregano and thyme) and a smoky blend of spices in a house made chicken and seafood stock. This soup is hardy and a trip straight to Flavortown! Each purchase comes with a side of white rice, naturally.

Sunshine Soup

Back by request, I have this tomato and roasted root vegetable soup I have come to call “Sunshine Soup”; a delightful blend of vibrant ingredients sure to warm your soul. Not your typical tomato soup, this one is bursting with the earthy sweetness of roasted sweet potato and carrot while balanced with the zing of fresh orange zest, ginger, garlic and basil. Savor each spoonful of this comforting soup with slices of fresh baked bread from two different loaves (roasted garlic and herb blend), baked locally!

Beef (not-so-barley) Buckwheat Soup (GF)
I have heard more people express their love of beef barley soup perhaps more than any soup. I wanted to take the comfort classic and make it gluten free friendly by replacing the barley with buckwheat groats. Turns out, buckwheat groats, despite the name, are not wheat at all and also do not contain any gluten. This upstanding pseudocereal cooks up quick, has a lovely texture and a slightly nutty flavor. It is a nutrient dense grain option with its ample supply of fiber, resistant starch, micronutrients and a generous supply of protein. I also can’t help but think of my late grandpa lovingly referring to his various favorite animal friends, whether it be a raccoon, squirrel, dog or what have you, as “Buckwheat”. Maybe a few of you might think of the Buckwheat character from The Little Rascals- “Otayyyyy!”
So in this soup, you have our beloved buckwheat, chunks of (local) beef, house made bone broth, carrot, celery, onion, garlic and herbs. Each order comes with some locally made sourdough bread (not gluten free… please indicate if you would like it omitted!).

Butternut Green Curry with Thai-inspired Turkey & Rice Meatballs

Finally got this dog back in the kitchen! After closing up the golf course cafe for the season back in November, I chose to take some time off to reset and revamp. It was great! I had lots of quality time with family and friends, taking trips, I have been attending a small business class and getting things done at home. I appreciate everyone who has been reaching out and wondering when Soup Dogg would reactivate- thanks for your patience! I have missed you and the opportunity to share my love of flavors with you!
I had been missing our wonderful Thai restaurants the last couple months, as they also took some time off (Thai Port on the bayfront is back open now.. woo!). So I decided for this first soup to dive into the lively, lovely flavors of fresh made green curry- full of ginger, galangal, cilantro, Thai basil, garlic, lemongrass, lime, jalapeño and Thai chili and a touch of fish sauce (otherwise this soup is vegan- but I just LOVE the flavor achieved and it feels Thai essential). Featured veggies include roasted butternut squash, fresh green beans, red bell pepper, cremini mushrooms and sweet onion which all come together in house made veggie stock (no concentrated soup bases used here!) and the lovely sweetness of coconut cream.
Served on the side (but with all intention of dunking and soaking in the soupy goodness), are some Thai flavored inspired baked turkey and rice balls. This is a bit of a culture fusion- thinking Thai meets Mexican albondigas ? Maybe a little wild, but hey, let’s live dangerously 😉

✈️ I had a last minute opportunity to jump on a plane to Cabo with my family! 🇲🇽 🎊 Hence the lack of Soup Dogg this past week.

Burmese Khao Suey
-coconut curry soup with chicken, vegetables and noodles (choice between rice or egg/wheat)
Myanmar (Known in the English language as Burma until 1989) has an interesting history and culture with a blend of influences from surrounding countries; while I do not claim to be any expert here, I do find this soup exemplifies some of this blend. For me, I think of Thailand's khao soi curry dish but with spices that lend to a more Indian persuasion. It is a vibrant rendition of a chicken noodle soup. The first step was making the curry paste; loads of fresh turmeric, ginger, garlic, cashews, cilantro blended with toasted fennel, cumin seed, coriander seed, black peppercorn, black mustard seed and fenugreek. Next was to brown the onion with bay leaves and curry leaves. Combining it all and adding fresh made chicken and vegetable stock creates an incredibly flavorful broth. Thickened slightly with chickpea flour (unfortunately was not able to find the traditional gram flour, otherwise known as besan, however chickpea flour works in a pinch!) and the slightly sweet addition of coconut milk. I chose to use the following vegetables: mushrooms (roasted), sliced zucchini, red onion and shredded carrot. Chicken and chana daal (split chickpeas) provide your protein and you can choose between rice noodle or egg (wheat) noodle. Noodles are served on the side with fried garlic, peanuts and fresh cilantro (also a red chili for the option of ramping up the heat!).

Soup Dogg’s Schi
-Russian Cabbage Roll Soup with Vareniki (Potato filled dumplings)
*Made with beef, pork. Dairy-Free. Dumplings are made with wheat flour.
Many countries have some kind of variation of cabbage rolls in their main culinary repertoire. My first encounter was also my first attempt at scoring points with my boyfriend's family at my first Christmas with them- lots of firsts. It was a challenge I did not take lightly! HIs mother, being Russian, was always responsible for making cabbage rolls and all kinds of other delicious Russian dishes. Lots of time, burned hands and just genuinely making a mess, and somehow I managed (although I know cannot compare to his mother's!). I fell in love with the flavors- just enough tomato to not overwhelm, tons of fresh dill, ground meat, blend of vegetables, brightness of vinegar and top it with some sour cream, so good! Later down the road on a much lazier night, I wanted to recreate those flavors but in a soup. Call it the lazy person's answer to cabbage rolls. Turns out- it IS a thing! Russians call it schi. Schi has no strict rules and a very general guideline- must contain CABBAGE. Now I make this all the time for us at home.
Another Russian staple and favorite are the dumplings; pelmeni if you are making them with a meat filling and vareniki if making them with a potato filling (and no, not exactly like a pierogi). Most typically pelmeni or vareniki are served quite simply with butter, fresh dill, maybe a little red wine vinegar and perhaps a dollop of sour cream. While you definitely can form by hand, I used what I believe to be one of the neatest kitchen contraptions- a pelmenitsa (see pic below). I know- another kitchen gadget but I am telling you if you love making fresh pasta, get one of these!
So for this, although not a traditional move by any means that I have read- was combining my version of Russian schi and adding dumplings; in this case I chose vareniki (potato filled). Consider this a pre-Valentine ode to my love ❤ Aww.

West African Peanut Stew
(Vegan, Gluten Free)
I love this soup. It is hearty, it is warming and it likely will bring a new flavor that is perhaps familiar. Peanuts have a strong presence within culinary applications throughout East, South, Central and especially so in West Africa. I wish I could say I have been there to tell the tale, but hey this is me traveling through reading and my receptors are my tastebuds. In this peanuty, tomatoey, gingery, garlicky soup includes sweet potatoes, chickpeas, collard greens, red bell pepper and onion. I had some fun playing around with charring all of the veggies which I think adds a deeper note to the flavor. Each order comes with crispy okra, toasted peanuts and fresh cilantro to top off your bowl.

Chicken Congee
-a Chinese comfort staple. Essentially a rice porridge-style soup made with loads of ginger, garlic and herbs. Great for digestion!
Comes with homemade garlic-miso chili oil & fried shallots.
Allergen info: Gluten Free, Dairy Free; Made w/Chicken, Contains Fish sauce
Congee is a well-rooted staple not just in China, but across Asia, although under different names and variations. It is commonly a breakfast dish because of its digestive benefits but can and is enjoyed for any meal. My introduction to congee was in my Nutrition program at Bastyr University. Working with patients in the clinic, we would often "prescribe" congee to individuals in digestive distress. The rice is cooked so far down that it is very easy to digest and also creates a gel consistency that seems to help soothe the digestive tract. Besides the digestive benefits, the flavors you can infuse are mouth-watering! This adaptation of congee was created with a stock infused with star anise, fennel, coriander and is loaded with fresh ginger and garlic. Tamari (gluten-free soy sauce) and fish sauce adds a subtle salty and umami note (If you aren't familiar with fish sauce, don't be scared! It's an incredible condiment and a culinary weapon. I love it!). I chose to add the following vegetables: onion, celery and bok choy to add freshness. The chicken is pasture raised and purchased from Oregon Valley Farm 🐔
🌶The garlic-miso chili oil was super fun to make and is delicious drizzled on top of the congee! Top with the homemade fried shallots and you have a very satisfying bowl of nourishment ☺

The Rabbit symbolizes longevity, peace and prosperity- can't hurt to 'cheers' a bowl of congee to that! MOROCCAN HARIRA~
🥣 tomato-based, harissa spiced soup with chickpeas, lentils, roasted sweet potato, carrot, onion and celery.

WARNING ☢ Not for the faint of FLAVOR!
Harira is a Moroccan staple typically consumed as a starter of a meal. It is also the most commonly eaten food during the fasting month of Ramadan. There are numerous renditions of it but the crucial elements are harissa (a paste made of chiles, garlic, ginger, lots of spices and charred bell peppers- at least in this homemade version), tomato, chickpeas and lentils. It is often made with beef or lamb, however this time we went vegan- and honestly it has so much flavor and protein from the legumes that the meat is not even missed. This is a hearty soup! Spices include caraway seed, cumin, turmeric, coriander, ginger and garlic with the added freshness of cilantro, parsley and lemon zest.

In honor of Las Posadas I would like to bring a festive bowl of pork pozole! Pasture raised pork from Walker Farms in Siletz. I love that I was able to go to La Juquilita for some key ingredients including beautiful dried chilies and dried hominy- which I feel gives a great taste unlike the canned. This soup has a nice earthy spice to it. Comes with the toppings- cabbage, cilantro, radish, jalapeño and tortilla chips!

CHICKEN ‘n’ DUMPLINGS

Cozy up this weekend with a bowl of chicken and dumplings! Pasture raised, organic chicken (picked up from Oregon Valley Farm) slow simmered and combined with organic vegetables: carrot, potato, onion, celery and garlic. The dumplings are gluten and dairy free. Each bowl will be chock full of beautiful chicken, hearty vegetables, and lots of tender dumplings. All vegetables were purchased from JC Market of Newport (I love that this is a locally owned company and they carry a lot of Oregon based products!).
There is so much beauty in this time, but also so much heart hurt- I made this soup with all that in mind ❤

HUNGARIAN PALÓC
Local lamb, vegetables in a savory rich paprika broth (not spicy).

Forgive the late start to the year. Last week I returned from my European adventure where I got to travel to Mallorca, Spain then Oslo, Norway (for my little brother's WEDDING 💒) and then to Budapest, Hungary. A wonderful mix of adventure, relaxation, celebration, and of course good food all with quality time with family.
Going to Hungary, I already planned on bringing home a TON of paprika! It's true, there really isn't much of a substitution for true Hungarian paprika and it is no wonder why so much of their cuisine centers around the indulgent spice. One evening, my NEW SISTER and I ventured to the Michelin guide recommended restaurant Textúra (it's sister restaurant has earned 1 Michelin star however Textúra boasts the same quality with slightly less formality). As a starter I went for the soup (of course); this is where I came to learn the soup palóc. It is very similar to Hungarian goulash (think meat simmered with hearty vegetables and of course paprika), however palóc has the addition of sour cream, fresh dill, and green beans. The outcome of this combination produced a broth that was rich and velvety that I can still taste today. Naturally I thought I MUST share this with the Soup Dogg Pack!
My preparation of Palóc uses the traditional lamb which was purchased from the amazing people of Walker Farms of Siletz (They raise/sell lamb, pork and a myriad of amazing canned goods- plus they deliver every Wednesday! So get your order in by Tuesday!). The vegetables used were organic potato, celery, carrot, parsnip, green beans and just a bit of yellow bell pepper (mostly all purchased from Oceana). As always I like to anticipate the reheating process so the green beans are very al-dente but that is on purpose so it keeps some texture. I used a cashew-based yogurt in place of the sour cream and I am so pleased with the results!
