This month was a special. She is literally half the person she was 6 months ago and this is the first time she has seen her progress pics. It's amazing how blind we can be to our own progress and how we focus more on the negatives instead of the wins. Seeing this created a new vigor for her and she has started to go to the gym without me and use my meal plan as a reference instead of a guide. My clients hear me say "I want better not Perfection". She has embodied 100% and that Consistency has created results.

December was a difficult month for most people with holidays and the New Year. Same could be said for us as well. No weight was lost this month but we still lost 3 inches. The goal is better not perfection! Keep moving forward and celebrate the victories no matter how small.

Sauté peppers, onions and hummus Wrap😍😋 We definitely are not a vegan household but it is important to diversify your foods and eat more vegetables. This is one of my favorite wraps that I eat in romaine lettuce. We didn't have any Romain lettuce or wraps so I used slices of bread which I got yelled at for🤣🤣
Another exciting post my clients wanted to share after 3 months! Following my meal plan and being ok with not being perfect, but striving to be better has led to great results. Consistently is key and belief in the process. If she can do it you can definitely do it. Retake control over your life
Mariscos con Coco Dominicano is One of my favorite original recipes to put in my Mediterranean Meal Plans and to eat! It's light a full of flavor I will definitely make it this weekend! Recipe is below
Mariscos con Coco Dominicano w/ spaghetti squash
1 small diced onion
3 garlic cloves sliced thin
1 Tbs salt & Pepper
1 pound of shrimp
1tbs coriander
1Tbs Turmeric
Cinnamon stick
1Tbs ginger sliced thin
½ cup chicken stock
½ cup coconut cream
1 cup of coconut milk
2Tbs Lime juice
First preheat the oven to 400 degrees. Cut the spaghetti squash into two halves, and scoop out the pits. Sprinkle a Tbs of salt and pepper on each half and apply olive oil on a baking sheet. Put water enough water in the baking sheet that it doesn’t overflow then bake the squash flesh side down for 30-40 min or until the outer skin is soft. In a large nonstick saucepan on medium heat add the diced garlic until you can smell it. Take your diced onion and cook them until they are translucent. Then add your shrimp, sliced ginger, coriander, turmeric, and lime juice. Once that is mixed and aromatic and the shrimp is warm and pink add the chicken stock, coconut cream, and coconut milk. Allow to boil and then reduce it to simmer for about 10 or 15 minutes until reduced by 1/4. Allow the sauce to cool, and take out the squash. With a fork scoop out the meat of the squash into a bowl. If you want add a Tbs of flour the squash to allow the sauce to cling on to the squash. Toss the squash in the pan with the sauce, and add some coconut flakes on for garnish (optional).

She has lost a total of 13lbs, 3% Body Fat and 22 inches overall! 👏👏 My client wanted to share her journey with everyone to help people who struggle on a daily basis with weight as she has been her whole life. She has still yet to see these pictures, what words of encouragement would you give her?
This is my clients first month and she is down 9lbs, 13in and 2% Body Fat. She wanted to share her journey with everyone. Like alot of people she had struggled and wants to use this opportunity to hood herself accountable and maybe help another person.
