Clarity Coffee is a simple coffee shop on the western edge of downtown OKC roasting in house and serving a small menu of traditional coffee and espresso drinks as well as flavored lattes, teas, lemonade, hot chocolate, and freshly baked pastries.
CONGO KATANA
Our newest release is the Congo Katana. This is a natural process coffee from The Democratic Republic of the Congo and joins the rest of our lineup in our new bag design. We’re tasting raspberry, cherry cola, and wine.

Natural process Ethiopia Sidamas are some of the most complex and vibrant coffees we ever come across, and this lot from farmers around Bombe village absolutely fits that description. Expect extremely fragrant notes of strawberry, raspberry, and jasmine and a sweet clean finish.

COFFEE BIOGRAPHY
Bombe is a privately owned farm and processing site near Shantawene Village, whose coffee we have featured in the past, tucked away in the Bombe mountains of Ethiopia’s Sidama growing region. Along with coffee from their own farm called “Daye Bensa”, they are buying and processing coffee from local farmers from three different growing areas nearby - Shantawene, Bombe and Keramo villages. This lot is a mix of coffees harvested from their own farm and outgrowers around Bombe village. They are a certified organic station, however, we do not have access to the certificate (worth noting — they’re also Rain Forest Alliance and UTZ certified.)

First, you’ll notice an incredibly floral nose, but once you dive in, it will burst with peach candy and bubblegum notes, making this one of sweetest coffees (if not the sweetest) on our menu.

COFFEE BIOGRAPHY
The Halo Beriti washing station is located near Gedeb town, within Ethiopia’s southern Gedeo Zone, a few kilometer south of Yirga Cheffe. The collection sites draw from farms in Halo Beriti and neighboring villages as well. Most of the farms in this area are very small, with far less than 1 hectare of land, and altitude at the farms spans from 1900 to 2200 meters above sea level. It’s very cold in this area and they employ a long fermentation to break down the fruit mucilage stuck to the green coffee seeds. After the outer cherry is removed, the coffee is typically fermented with water for up to 36 hours, then soaked for another 24 hours in clean spring water, and sent to the raised drying beds. That long fermentation may have something to do with the fruit flavors found in this washed lot, but does little to dampen the floral-forward aromatics!

What’s that brewer?
It’s actually a few different things! We make all our coffee on Stagg XF Drippers with a and scale. Brewed by the cup, we love the clairty in the coffee from doing our pour overs this way.
You can make great coffee at home too! The Stagg XF Dripper can be used directly on your coffee mug or with the glass carafe seen here. We have them in the shops and any of our baristas can show you how it works.

COFFEE BIOGRAPHY
The anaerobic fermentation is responsible for some but not all of the depth of flavor and the sugary sweet berry notes. Some of it comes from a very special variety of coffee called Wush Wush.If you’re familiar with Gesha coffees (like the one we featured for our birthday last year), both Wush Wush and Gesha have followed similar paths through the coffee supply chain. They both originate from Ethiopia, have been relocated to the Americas, and have unique sensory qualities that specialty coffee drinkers often look for in the cup.
⚡️As always, this coffee was sustainably roasted on a fully electric roaster.

It's always special when we bring a Kenya onto the menu! Coffees from Kenya are known for their complex, fruity acidity and intense floral characteristics, and this coffee is no different. We think you'll enjoy this coffee for its floral tea notes and dried fruit and caramel sweetness!
COFFEE BIOGRAPHY

Kamoini is one of several coffees we picked up from Othaya Farmer's Cooperative Society (FCS). Othaya got its start back in the 1950s and currently have 18 coffee factories under their umbrella. "Factories" are essentially small washing stations, or wet mills, aligned with a particular "society" in Kenya, what we would call a "cooperative". Kamoini Factory sits at 1,825 meters above sea level, right along the Ichamama River, which is fed from the Karima forest above. Being one of the older Kenya FCS, the quality from Othaya has been proven year after year. Because of this, the lot was purchased directly by our importer, not through the Kenya auction system. To get coffees like this, we pay a price that is higher than what the top auction bid might be, but it's worth it!
As always, this coffee was roasted on a fully electric sustainable roaster.
