My inspiration for the Saffron and Miso Poached Yukon Gold Potatoes, was that I wanted to show how versatile and vibrant potatoes can be. By cooking them in saffron and dashi, it made the flavors incredibly powerful. To make it even better, I experimented with different types of potatoes.
