What you’ll need:
4 large eggs
½ cup shredded gruyere or swiss cheese
⅓ cup chopped or diced tomatoes
½ cup sliced mushrooms
1 tbsp minced shallots
½ medium avocado, sliced or diced
Chopped scallions
Salt and pepper to taste
Avocado oil
Directions:
Crack eggs into a small bowl and whisk with a fork
Over medium-low heat, place 1 tbsp of avocado oil in pan
Saute the tomatoes, mushrooms and shallots
Add the spinach and sauté one more minute until wilted
Add the eggs and season with salt and pepper to taste
Push the eggs away from the side of the pan to keep the omelette cooking evenly
Once the eggs are almost cooked through, add the shredded cheese evenly over the top.
Cook 1-2 more minutes, put on lid and turn off heat.
Slide onto a plate and top with sliced avocado and chopped scallion
