Grilling tip:
Maintain your grill by doing the following after each smoke: Immediately after smoking, brush the rack clean with a grill brush. When thesmoker is barely warm to the touch, scrape out any grease that's accumulated in the bottom of the smoke chamber. Empty the drip pan or grease bucket.

Grilling Tip;
When cooking low and slow, you really don't have to put on a spice rub well in advance like salt; you can apply your rub just before cooking. Put your rub right onto the bare meat or help the rub stick by first applying a little water, olive oil, mustard or whatever you prefer to get the rub to stick.
Grilling tip:
Salt is a magical rock. It is the single most important flavor enhancer. Salt is a mineral, NaCl, consisting of one ion of sodium(Na) and one of chloride(Cl). This tiny, water soluble crystal suppresses the taste of bitterness, balance sweetness, and deepens and enhances flavors. Just a small amount can really improve a dish. It can also aid in moisture retention during cooking and even tenderize.
Grilling Tip:
Use Aged Woods
If wood is your heat source, use aged and dried wood. Green woods have more sap, burn irregularly, and impart different flavors than aged woods.
Grilling Tips:
After you take those nice juicy ribs off the grill, they may continue cooking for 20 minutes or more, even at room temperature, taking those perfectly cooked ribs to well done dry pork. This phenomenon is called carryover cooking.
