Quentin Paillard of Pierre Paillard Champagne in Bouzy Talks Family Tradition and New Winemaking... It’s the story of two brothers, the eight generation in their family’s Pierre Paillard Champagne legacy, dating back to 1768. Quentin, along with his brother Antoine, under the guidance of their father Benoit, are committed to growing organic grapes, 60% of which are Pinot Noir, located on 11 hecta...

Nice looking box from Champagne Nowack!
Meet Sébastien, one of the three brothers (Pascale, Philippe and Sébastien) who tend to Champagne Mouzon-Leroux's 10 hectares located predominantly in Grand Cru Verzy. Yes, they're also new to our portfolio, but Mouzon-Leroux is no secret in Europe, leaving only a very small amount of wine in our first offering. (Don't worry, we're hoping for more in the Fall!)
Although there are bits and pieces in Verzenay, Ludes and Villers-Marmery, the wines are informed by the contrasting east/west composition in Verzy which includes a lot of Chardonnay, as does Villers-Marmery.
As with so many others of his generation, Sébastien is thoughtful in the vineyards and the cellars. We were shocked at the amount of healthy cover crop thriving in between the vines in Verzy. It had been a relatively warm winter so far, but in contrast to his neighbors there was knee high growth in January! And what a mix of vegetation it is. They have even planted shrubs and trees in the vineyards to help break the mono-culture. Bio practices are adhered to, including teas. They have also made new plantings of the “archaic” varieties in Champagne to expand their holdings of Arbanne, Petit Meslier, Pinot Gris, and Pinot Blanc.
The cellar has the telltale signs of ongoing experimentation. There are many types and sizes of barrels and tanks, and also terracotta and concrete eggs. The wines ferment themselves and ML happens which helps to lower the sulfur use later. There is a texture aided by wood, but never detected in the wines.
The L’atavique is 55% Pinot Noir and 45% Chardonnay fermented 25% in oak. Our batch is the 2012 base with 35% reserve wine of the three preceding vintages. It is an Extra Brut with 3 g/l dosage. We also got just enough Rosé to fill a suitcase, and we’d be happy to busk for more, if it would work! L’incandescent is a 100% Pinot Noir Rosé de Saignée fermented half in wood, all 2012 vintage with 3.5 g/l dosage.
We would love to tell you more, so please don't hesitate to ask! And of course, you'll have a chance to taste Mouzon-Leroux and our other new Champagne at our June 13th Champagne tasting.
This is Aurélien Suenen, another new addition to our Champagne portfolio. After working towards becoming a professional basketball player, Aurélien returned home in the early 2000's with a renewed interest in his family’s winery, working closely with his father until his father's death in 2009. Having already begun to implement changes in the vineyards and the cellars, he quickly banned herbicides, and more natural, healthy approaches were taken in all aspects of the winery. Thoughtful, philosophical, and opinionated, Aurélien has strong ideas about quality of life that are reflected in his approach in creating his Champagne Suenen.
The still wines from 2015 made a fascinating tasting, and early disgorgements of the single vineyard wines point toward an incredible future that will place Suenen in the very top echelon of growers in Champagne, of this we are sure.
We have just a small amount of his Brut Réserve and Brut Rosé, and an even smaller amount of his Millésimé Grand Cru 2008 (which definitely lives up to the hype surrounding this great vintage). Want to know more? Just ask us!
Champagne Marguet is new to our portfolio, but the family has been in Champagne for a very long time. Benoît Marguet's forefather Émile correctly predicted the outbreak of phylloxera in Champagne in the late 19th century, but he did so almost a decade too soon and the decision and subsequent ridicule bankrupted the operation. The nearly 90 hectares of the Marguet family were sold to Henriot. Later, Benoît’s father married into the Bonnerave family, a grower producer since 1905, and created the Charles Marguet label. Eventually that was renamed Marguet Père et Fils, and Benoît made the wines there from 1999 on.
However, all of the vineyards belonged to Bonnerave, and Benoît was required to purchase fruit from his parents, neighbors (which he farmed), other family members and other growers around Champagne who he respected for their organic work. In 2008 he was able to purchase 8.5 ha of vineyards for Marguet from Bonnerave and the long dry spell of Marguet ownership in Champagne ended.
Benoît is certified Demeter and Agence Bio. He does not simply pick and choose amongst various disciplines and utilize up to the point it is convenient, or safe. He is very earnest and focused on the smallest details, and adamant about the value in certification. He decries bio-dynamics when it is a selectively practiced fe**sh in our industry. In all fairness, he has gone to incredible expense to build Marguet back up as a small négociant, buying the most expensive organic fruit that met his demands and has converted now all of his production to bio-dynamic. He has horses that work all 10 of his hectares now, and employs very little sulphur in the cellar. The wines are made in barrels, and all choose to go through malo. Benoît prefers liquor for the dosage, but insists on always making it the day prior so it does not oxidize, and he doesn’t have to utilize any sulphur to keep it from doing so.
We have four wines in our first offering. Three are from Benoit's property in Ambonnay, and the fourth is a blend of purchased fruit from a small handful of the most dedicated organic/bio growers in all of Champagne including Chardonnay from Leclapart, Meunier from Laval, and Pinot Noir from Lahaye (Bouzy).
Please help us welcome Champagne Marguet to our portfolio, and don't hesitate to ask if you'd like to know more!
This is Aurélie Masson and Loïc Barrat from Champagne Barrat-Masson. Their ECOCERT Certified Organic 7 ha of vineyards are located in Bethon in Villenauxe-la-Grande, in the very southwestern tip of the Côte de Sézanne. Aurélie is the winemaker, and she is meticulous in her process. The wines are structured and fresh. They do not promote malo, and rarely use dosage. Barrat-Masson is planted to 90% Chardonnay, but when you run into Pinot Noir in the the Sézanne, it can be really great. One of the three wines we carry, Grain d’argile, is 50/50 Chardonnay and Pinot. The other two are from 100% Chardonnay. Fleur de Craie is from chalk parcels, its name meaning Flower of Chalk. Les Margannes, a couer de cuvee, is given 30 months sur lattes and is unequivocally one of the best 2011's we have tasted. Please help us welcome them to our portfolio, and come taste their wines on June 13th!
Tomorrow (Monday) 12-3pm at Sociale Chicago! Sure, we're calling it a Rosé tasting, but we'll be pouring many other things white, red and sparkling, including these new gems!
