Pasta Primavera with Red Pepper sauce! Grain Free, Gluten Free and Dairy Free.

I used my favorite grain free pasta - Jovial Cassava & Vegan Cheese.

Sauté your veggies of choice in avocado oil with your seasoning preference. Don’t overcook - you want them to hold their shape and al dente.

Cook pasta separately.

Sauce (blended in Vitamix)

Two Roma tomatoes
A jar of roasted red peppers
Added 5 garlic cloves.

Add everything into a large saucepan (veggies, sauce & pasta) and simmer. Add vegan cheese - optional. Delicious 🍝

Air Fry at 400 for 14 min. Then flake it into a bowl

Found this Red Pepper Veggie Pasta Salad recipe on TikTok and it’s amazing! I made one batch with regular pasta for the kids. And another batch with Grain Free Cassava Pasta for us. Super easy!

Make the pasta & drain (I used an ice bath to keep them Al dente and cold)

The Dressing (blended):
1/3 cup vinegar (I used red wine)
1/2 cup olive oil
8oz jar marinated red peppers (drained)
4 peeled garlic cloves
2 Tbsp Organic Maple Syrup

Crunchy veggies of your choice (diced). I used an organic cabbage cole slaw mixture, cucumbers, red onion and red pepper.

Pour dressing over & Mix all together. Soooo good!!!

Special request - Salmon/Rice Bowl. Air fried Teriyaki Wild Salmon, sautéed veggies, spicy mayo, furikake. Yum!!!! This time white rice instead of Cauli rice

4 Ingredient Muffins. Grain Free & No Added Sugar

Salmon Bowls with Cauliflower Rice

Soooo amazing!! Took 10 min.

Frozen Cauli rice sautéed with Sesame oil/seasonings. Air fry teriyaki marinated wild salmon at 400 for 8 min. Add Cucumber, Carrot, Avocado, Toasted Sesame seed, Futimaki Rice Seasoning, Spicy Mayo, Teriyaki and pickled ginger.

Serve with Seaweed.

Ten Minute Baked Truffle Artichoke Stuffed Mushrooms 🍄

Filling:
Chopped cooked artichoke
Fresh Basil (chopped) 🌿
Vegan Cream Cheese (I like Kite Hill)
Salt
Pepper
Onion Powder
Garlic Powder
Minced Garlic
1 Tsp Truffle Oil (yum!)

Clean mushrooms
Remove Caps
Add the filling
Bake at 350 for 10 min
I cooked mine in my Air Fryer for 6 minutes

The Truffle oil makes them get crispy - amazing flavor!

2 Tbsp Hot Water
2 Tbsp Monk Fruit
Splash of Vanilla

Blend together until frothy.

Pour over Vanilla Almond Milk & Ice

I added a dollop of Vegan Coconut Whipped Cream
