Make it dirrrty! Queso so naughty. 😈
Rolling tortilla balls. We do it every day thousands of times over. I channel my good friend .bagels.poetry when I see the promise in every 1 oz ball of dough, the future taco, the future smile and moment of delight. Made with love and hope 🙏🌮❤️
Last week, I got a New York Times recipe email that featured Migas. As a person whose mission has become shouting the virtues of migas from mountaintops and street corners, I was delighted to see this perfect dish given such a platform! But I was also scared thinking about what happens when a dish that is grounded in a time and place hits the mainstream. Eat a cheesesteak pretty much anywhere else in the country and you know what I’m talking about! So I thought I’d take a moment to share this article from 2022 about a restaurant that closed in 2007 to make way for a hotel that is very representative of the New Austin. (No hate! I love you, Austin!) I first had migas at Las Manitas. That dish at that restaurant got talked about all the time. Las Manitas and I only overlapped for 2 years, but I came to discover the ease and chill and everyone’s-welcome vibe of my new home in that restaurant. So here’s a little shout out to a beloved memory I know I share with thousands of others.
These are not our tacos! But this IS the headline photo for article about breakfast tacos in our fair city. Check out the article in our bio if you haven’t already. If you follow us, then you probably already know how damn good it can be to start your day with fresh flour tortillas, eggs and/or beans, and salsa. You probably know that a Migas taco can solve all of your problems, if only for a spell while it sits next to your coffee, between you and whatever is about to happen in your day. You probably get it.
I absolutely had my life changed by and want to make sure their name never gets lost as breakfast tacos pop up in other parts of the country. Maria’s also. Hippie church on Sundays with dancing and flowers and bloody marias and breakfast tacos. These places and more made morning time my favorite time to eat in Austin. and more and more…
Thank you for finding so many Philly spots so one day we can have our own breakfast taco traditions!
Lastly, shout out to for partnering with us every Friday on our smoked brisket offerings. They are a special not to be missed!
