para deleitar el paladar del emperador Agustín de iturbide y forman una de las más patriótico platos de la cocina mexicana chiles en salsa de nuez en 1821 un años antes Ser Coronado como emperador de México el entonces general Agustín de iturbide en su camino a la capital después de firmar el tratado de independencia hizo una parada en la ciudad de puebla y el plato único degusto coincidiendo con el día de su santo de las autoridades locales lo presentó el nuevo Plato que integra la bandera mexicana verde de chile poblano y salsa blanca con nueces y queso y rojo granada color y sabor de chile aroma nogada podría con la resistencia de iturbide a pesar de sus temores de ser envenenado devorar el nuevo plato .

The traditional chile en nogada is from Puebla; it is tied to the Mexican independence since it is said they were prepared for the first time to entertain the future emperor Agustín de Iturbide when he came to the city after the signing of the Treaty of Córdoba. This dish is a source of pride for the inhabitants of the state of Puebla.
Some Mexican historians believe the inventors of this dish were the Monjas Clarisas, although others think they were the Madres Contemplativas Agustinas of the convent of Santa Mónica, Puebla.
