💥✨🧾RECIPE ALERT💢💫
Here comes the idli/dosa batter recipe :

Ingredients :
- 2 cups idli rice
- 1 cup regular rice (I used sona masoori)
- 1 cup split urad dal
- 1 cup poha
- few methi (fenugreek) seeds

Method:
- Mix idli rice, regular rice and daal in a big bowl .
- Mix poha and methi seeds in another bowl.
- Wash them atleast 3-4 times and soak for 8-10 hrs.
- Then grind them using very less water .
- Make a paste of everything and put it in the oven ( I just keep the oven light ON for heat ) . Keep it for another 6-8 hrs.
Fermentation will be according to the climate at your place . So the time may vary .

This is a no fail recipe guys.. I am using this for a long time now and every time the batter comes out amazing and idlis are very soft! 🤩❤️

TIP: Always use the room temperature batter for idlis so I use fresh fermented batter before putting it in fridge to make my idlis.
And then you can keep the leftover batter in the fridge and enjoy making the dosas . 🙂🙃

1 quick tip that I learned for this process in order to get beautiful long sprouts is to use distilled/filtered water while soaking them overnight. It has worked wonders for me. Try it out !

In Frame : Punjabi Masala Matthi
⭕⭕RECIPE ALERT♂️♂️

Ingredients:
- 1 cup APF(Maida)
- 1/4 wheat flour
- 1/8 cup sooji
- 1/4 cup Gram Flour(Besan)
- 1/4 cup Oil
- 1/4 tsp Cumin seeds (Jeera)
- 1 tsp Carom seeds( Ajwain)
- 1/2 tsp Corainder seeds
- 1/2 tsp Fennel seeds
- 5-6 whole black pepper
- 1/2 tsp Salt
- Heeng a pinch
- 1 tbsp kasuri methi

Method:
- Coarsely grind all the whole spices.
- In a bowl, Mix all the ingredients and the whole spices.
- Make a stiff dough using some water.
- let the dough rest for 15-20 mins.
- Take small portion of the dough and then press it within your palms to make the mathri shape.
- Fry them in medium flame.

Easy Peasy Coconut Ladoos🤗
⭕⭕RECIPE POST♂️♂️

- 100 gms dessicated coconut
- 120 ml milk
- 100 gms sugar
- Pink food color
- 1 tsp ghee

Method:
- Heat ghee in a pan. put coconut and roast for 2-3 mins on medium flame.
- Add milk and let it dry completely. you will see a crubly texture of the coconut .
- Now add sugar and mix everything well. let it cook for another 5 mins. until the mixture leaves the pan.
- Let it cool down a little bit. then add the food color of your choice.
- Shape out the ladoos and roll them in dessicated coconut.

Mawa Gujiyas !! ⭕⭕RECIPE ALERT♂️♂️

Filling:
- 200 gms mawa
- 1/8 cup nuts(Almonds and Cashews)
- 1/8 cup Shredded coconut
- 100 gms powdered sugar

Mix everything well

Flour:
- 250 gms Maida
- 50 gms ghee
- 1/2 cup water

Need soft dough and let it rest for 15-20 mins

Sugar syrup:
- 300 gms sugar
- 250 gms water

Boil until honey like consistency. ( No taar needed)

Method:
- Make small balls out of the dough.
- Roll it round.
- Put 1 - 2 tsp filling in it.
- Put some water on all the edges
- Fold to make semi circle and then shape them out.
- Fry them in medium hot oil.
- Dip in warm sugar syrup for a minute.

Veg Kadhai!!
⭕⭕RECIPE POST♂️♂️

Kadhai Masala:
- 1 tbsp dhaniya seeds
- 1 tbsp sesame seeds
- 1 green cardamom
- 1 black cardamom
- 1 small stick cinammon
- 4-5 dry kashmiri chillies

Roast everything and then grind into a powder

- Heat some oil in pan, cook all the veggies in it. I took carrots, peas, beans , cauliflower, paneer and green pepper.
- Once cooked add the kadhai masala into it.

- In another pan, heat 3-4 tsp oil .
- Add 1 chopped onion. let it cook.
- Add 1 tsp ginger garlic paste.
- Then add 1 chopped tomato and let it cook.
- Add salt in it. also add 1/2 tsp sugar to adjust the spice level.
- Now add the prepared veggies into it.
- Add some water and let the veggies cook completely .

In Frame : Tawa Pulav💕
⭕⭕RECIPE ALERT♂️♂️

What's for lunch today? Try this rice dish!! 😊

Ingredients :
- 1 cup rice( washed and soaked for a few mins)
- Mix veggies chopped(Carrots, Green Beans , Capsicum, Peas)
- Cashews chopped(10-12 pieces)
- 1 onion chopped.
- 1 tomato chopped.
- 1/2 tsp Red chilli powder
- 1 tsp Salt
- 2 tsp Pav bhaji masala
- whole spices ( 2-3 laung, 1 stick cinnamon stick, 1 anise star)
- Butter 2 - 3 tsp

Prepare the rice :
- In a pressure cooker add rice and all the veggies except Capsicum.
- Add some salt and wait for 2 Whistles . Let it cool down.

Tadka:
- Heat butter in a pan.
- Add whole spices.
- Add cashews .
- Add chopped onion and let it cook.
- Add tomato and let it cook.
- Then add the capsicum and let it cook.
- Add all the spices and then mix the prepared rice with it.

Voila. its done!! ☺️❤️

Any guesses what that is?

Hint: Its Veg, Nutritious and Tasty!

Its the major protien source for the vegetarians.. Soyabean kebabs!! ❤️

Since we dont like soya in any other form .. But want to have it for its nutritonal value.. I tried my hands on these beauties.. And they turned out really tasty.. 😊

Recipe:

- Soya granules 1 cup.. soak in 3 cups of hot water for a few mins.

- Take 1 onion, 5-6 garlic cloves, 2 Inch ginger, 2-3 green chillies, some cilantro in a blender .. Take that soya.. remove the water from it completely.. put in the blender with everything else and make a paste.

- Put 2 tbsp of maida and 2 tbsp of corn startch in the mixture.

- Add red chilli powder, dhaniya powder, salt , garam masala in the mixture.. then shape them out and fry..

As its national coffee day today, its only appropriate to present in front of you the famous coffee drink of the year 2020.. DALGONA COFFEE!!

My dalgona story: 😃

Third time was the charm for me. .
- Frist time : Too little milk , too much coffee , needed little more sugar
- Second time : Too little coffee, too much milk , again needed little more sugar 😆
- Third time : Perfect balance of coffee, milk, sugar!

It's the perfect creamy, frothy cold coffee I have ever had in my life!

I also added a pinch of cinammon to it which according to me enhanced the flavor even more..

In Frame : Tomato Soup ❤️
⭕⭕RECIPE POST♂️♂️

As the name suggests , main ingredient is tomato but I add few other ingredients too in order to make it look and taste just like the one straight from a restaurant. 🤗

Check out the recipe below:
- 3-4 big red tomatoes
- 1/2 onion chopped
- 1/2 beetroot(for the bright color)
- 1 carrot
- 1 potato(for the creamy texture)
- 1 bay leaf
- 1 tsp ginger garlic paste
- 1 tbsp butter
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp sugar
- cream (for garnish)

Method:
- Heat butter in a cooker.
- Add bay leaf, ginger garlic paste.let it cook for a few mins.
- Add onion and let it cook .
- Now add all the other veggies.
- Add 2-3 cups of water.
- wait for 2-3 whistles.
- Now let it cool.
- Take out the bay leaf and then blend it in a blender .
- Strain in a pan.
- Add salt, pepper, sugar and let it cook for a few mins.
- Garnish with cream!

♂️♂️ RECIPE POST ⭕⭕

Itna addictive hai ye snack ki ek baar khana shuru karo to band hi nhi kar sakte!! ☺️

My all time fav since childhood. Tab papa laya karte the and I remember I used to just eat this as a replacement of my meals😜 ab ghar mein bna rhi hu..

Filled with the goodness of ghee and coated with sugar.. Heavenly!

Ingredients:
- 2 cup maida
- 1/4 cup ghee
- 1 cup sugar

Method:
- Take Maida, add melted ghee to it.
- Make not too soft dough using warm water.
- let it rest for 15-20 mins.
- Cut into thick square shapes.
- Fry them in medium hot oil for 15 - 20 mins.
- In another pan, take 1 cup augar and add 1/3 cup water.
- Make 2 taar chashni.
- Coat the fried squares with the sugar syrup.

Instant Rava Idlis
⭕⭕RECIPE POST♂️♂️

This is one of my favorite goto snack.. so easy to make and healthy as well as tasty at the same time! Kids enjoy it too😍💞

Ingredients:
- 1 cup rava
- 1/4 cup curd
- 1 tsp salt
- 1 tsp rai
- 1 tsp split urad dal
- 4-5 curry leaves
- few cashews (cut into pieces)
- 1 carrot finely chopped
- 1 tsp eno fruit salt

Method:
- Heat a pan. Add 2 tsp oil.
- Then add rai, curry leaves, urad dal and cashews.
- let it cook for a few mins .
- Then add carrot . let it cook
- Then add rava to it. Cook for a few mins.
- Take it out in a bowl. Add curd into. Mix well.
- Then add Eno fruit salt.
- Pour the mixture into idli stand.
- Steam for 15- 20 mins.
Ready!🤩

Dhabha Style Paneer Masala ! ⭕⭕RECIPE POST♂️♂️

as everybody loves paneer at home , I tend to try different kind of paneer recipes .. So this was what I made this Saturday.. 😊 Sharing the recipe with you all.

Marinate:
- 250 gms paneer
- 1/2 tsp salt
- 1/2 tsp turmuric
- 1/2 tsp coriander powder
- 1/2 tsp red chilli powder
- 1/2 tsp garam masala

-In a pan add the paneer cubes and all the masalas. Add little water and mix . This should coat all the masala on the paneer.

- Heat 2 tsp oil in a pan and all the paneer cubes to it. cook it for a few minutes.

Gravy:
- 1 big onion grated.
- 2-3 tomatoes grated.
- 1 tbsp besan(chickpea flour)
- 1 tsp ginger-garlic paste
- Same masalas used for marinate
- whole spices(1 bay leaf, 2-3 cloves, 1 black cardamom, 1 green cardamom)
- fresh chopped dhaniya

Method:
- In a pan, heat 3-4 tsp (oil and ghee)
- Add whole spices cook for a min.
- Add onion and cook for a few mins.
- Add Tomato and ginger-garlic paste .
- let it cook for a few mins.
- now add all the masalas and cook until the oil separates.
- Now add the prepared paneer and little water.
- Top it off with dhaniya!

⭕⭕RECIPE POST ♂️♂️
Imli - jaggery sweet chutney ! 😍
Its a must to have this khatti meethi chutney in your fridge at all times.. Goes well with all kinds of snack .. Be it samosa, kachori or any kind of sncak and stays good for almost a month in the refrigerator.

•Recipe:
- Water 1 litre
- Tamarind 3/4 cup
- Jaggery (gur) 2/3 cup
- Sugar 1/2 cup
- Black salt 1 1/2 tsp
- Red chilli powder 1 tsp
- Fennel 2 tsp crushed
- Cloves 1/2 tsp crushed
- Anardana 1 tsp crushed

Method:
- Heat a pan and add all ingredients to it.
- Let it simmer for half an hour.
- Strain out the chutney.
- Store it in an air-tight container in the fridge.

Kadah prasad(wheat floour halwa).. ⭕⭕ Recipe Post♂️♂️
One of the easiest and tastiest dessert ever..
I have such fond memories of my childhood when we used to visit the gurudwara and wait for this tasty treat there..🤗
Its really close to my heart❤️💕 So I would like to put this as an entry towards the contest , organised by sponsored by


Recipe: As per Ranveer Brar sir, the ratio of ghee , sugar , aata and water is 1:1:1:1 But I always follow my mom's recipe when its comes to traditional food items like this and we use 1:1:1:2 ratio.. That works out perfect !

Method:
- Heat 1 cup ghee in a pan, and roast 1 cup aata in it. Until it turns aromatic and brown.
- Add 1 cup sugar to it and mix well and add then add 2 cups room temperature water to it.
- cook until it leaves the pan.

Crostini. . ⭕⭕RECIPE POST♂️♂️

Step 1 :
- Melt some butter and add crushed garlic to it.
- slice the bread piece in two and coat it with this butter.

Step 2:
- Heat 2 tsp olive oil in a pan . Add chopped onions, jalapenos to it. Let it cook for a few mins. Also season it with salt, oregano, red chilli flakes and parsley.

Step 3:
- Place the bread slices on a baking tray . Put the ready mixture from step 2 over it and then put some shredded cheese over it.
- Bake for 15 mins.

⭕⭕RECIPE POST♂️♂️

Delicious indian sweet Rasmalai! 💕

Ingredients:
(For Chhena)
- 1 lt 2 percent milk
- 2 tbsp lemon juice mixed with 2 tbsp water
- 2 cups sugar
- 6 cups water
- 1/2 tsp corn startch

Method:
( For Chenna)
- Take the milk and boil it.
- let it cool down for 1-2 mins then add the lemon water mixture little by little until the chenna is formed and whey is separated.
- Wash it under fresh water and then drain in using the muslin cloth . After removing the water completely put it under something heavy for 10-15 mins.
- Take sugar and water in a pan and let it boil.
- Take chenna and add corn startch to it and knead for a few mins.
- Then make small balls from the chhena and put it in the boiling water for 15 mins.
- They will be three times in size.
- Then take them out ,squeeze the water from it and then soak into the milk mixture .

Ingredients : (For Milk Mixture)
- 1/2 lt whole milk
- chopped pistachios + almonds
- Few stands of kesar
- 1/2 cup sugar
- yellow food color (a pinch)
- 1/4 tsp cardamom powder

Method: (For Milk Mixture)
- Heat the milk in a pan.
- Add everything in it and let it boil for a few mins.

Let the malais soak in milk mixture for atleast 4-5 hours for best results.
