Our dark chocolate skeleton bars are hand-moulded with pure Ecuadorian 56% bittersweet chocolate. I'm made up of a variety of those apples--Macs, Gingergolds, Honeycrisps, and Cortlands--and cooked long and slow with organic sugar, boiled cider, fresh cream, and butter for perfect caramelization. For us fall in Maine means apple season! Farms all over the state open up their orchards for PYO (pick your own) starting in late August, and some have apples until early November. We start picking early varieties like Gravensteins, then move on to Paula Reds, Gingergolds, Macoun, and our all time favorite, MacIntosh Reds. For the apples we use in our Cider Caramel, we like to mix it up. Some super tart varieties blended with Macs at their peak of ripeness. And every once in a while we’ll throw in a very special outlier like a Golden Russet, or Black Oxford. We blend them with Maine honey, boiled cider from Vermont, and a sweet applewood-smoked Maine sea salt. It’s a recipe we spent years perfecting, and we’re honored to share it with you each season.

Ragged Coast Chocolates debuts dessert sauces The Maine-based chocolatier has announced the launch of Ragged Coast Dessert Sauces which mirror customer-favorite confections and are handmade in small batches with local ingredients.
You don't have to be a fan of "the pumpkin spice life" to fall in love with our autumn chocolates. Is there pumpkin? Yes. Is there spice? Also yes. There is also cider, and smoke, and caramelized maple syrup. Together they conjure sun-dappled orchards and crisp autumn air. We call it autumn in Maine, and it's the way life should be.
