So, in a past life I fought fires as a wildland firefighter for the briefest of moments. Even fought a fire here in the North Valley and again in the El Dorado National Forest when 9/11 happened. I ended up not going back my second season because I fell in love, but that's another story.
Sometimes I wish I never stopped doing it but I have two beautiful children out of that decision, and don't regret one minute of it. Plus, here we are now with this restaurant because of that line of choices I made for the past 23 years since, and every time I watch a community I am close to experience something like this it brings back a lot of big feelings of a bygone time in my life.
To everyone affected, our hearts pour out to you. The stress of it all is unfathomable.

We know it isn't much, but we'd like to extend the invite for anyone affected to come by the restaurant and get a Slice, Salad, & Pop on us, no questions asked. We know it's the smallest of reprieves, but we are hopeful it can help brighten up what is an extremely trying moment for many people.

In Celebration we have decided to make a 7 Cheese Pizza called The Monger.
This guy is packed with all the cheese. We have Whole Milk Mozz, Wisconsin Brick Cheese, Grande Provolone, Fresh Mozz, and Red Sauce Racing Stripes. We then finish it with 2 kinds of Parmesan, Whipped Ricotta, and a sprinkling of Oregano.
This thing is Buttah.
As soon as I can get my systems to speak to each other I'll have it set for online ordering too, until then just come by or give us a ring.

I made a Piri Piri sauce for the Pterosaur Wings and we finish it with a Cilantro Lime Yogurt.
If you've never had Piri Piri Sauce on Poultry you are missing out. Citrus, Smoke, and Spice.

The Burn has started.
And we know y'all are getting famished waiting in those long lines while grocery shopping, so we did a little something special with a bit of spice for the week.
This is the Black Rock. We start with our Brick blend cheese, then add a Spicy Mexican Chorizo, Castelvetrano Olives, Atomic Pineapple, Red Sauce Stripes, and finish it with a spicy pepper relish.
It's got heat, not enough to overly hurt, but enough to remind you that you are, in fact, still alive.
Also we made a Sundried tomato hot sauce this week I have been wanting to try, so let us know what you think.

This is what our best month ever looks like.
We will have benefits for the staff by October. I had a really good meeting today and everything is lining up.
I know I say that we couldn't do this without you every time I get a little sappy but legitimately we could not do this without you.
More importantly, it wouldn't be fun without you. And I know it's not always perfect, we are human, as much as I won't admit it for myself. But those of you who understand that and give us our due would even when we do make mistakes, make this so much more worthwhile.
I can honestly say I have never been a part of something where everybody was so absolutely invested in what we do. And every time I think about it I definitely get a little teary-eyed. So, thank you.
We are going to finish out our best month ever, no matter what at this point. We have just under a week left to make this an absolute banger of a month. So, let's gooooo!

Next week during Burning Man we will have a special spicy menu for the week.
Today I started working on the hot pepper relish for the pizza.
This is a collaborative effort involving , , and
Butcher Boy made us a small batch spicy Mexican Chorizo.
La Condesa donated some really scary looking chilis that we were having trouble finding for the relish.
And Nevada Brining provided the Atomic Pineapple for the pizza.
When it comes together it's going to be really special.
Cannot wait to unleash this on y'all next week.

Whelp, due to a confluence of multiple things converging on us today, we have found ourselves in a perfect storm of no kitchen staff this evening to run dinner service.
So we will be open for only lunch today and closing early at 3:30pm.
I understand that this can be frustrating if you have plans but unfortunately it's just what it is today.

The heart has called me back to Idaho to visit family.
This wasn't planned, but the crew has stepped up to allow Vic and I to step away until Monday. We are headed to Stanley to visit family.

We find ourselves stuck in the idea of what pizza should be, but I like to ask myself what pizza should feel like.
It's a moment, an experience. Something that cannot be confined to guidelines and tradition.
I have some, in my opinion, wonderful things in the works. I hope y'all enjoy the journey. I personally cannot wait.

The United States of Pizza Is there a more endlessly reinventable food than pizza?
I wanted to express my gratitude for each and everyone one of you who believes in us and supports what we are doing.
I didn't sleep much last night, as I always overthink my decisions and whether or not they will be healthy for everyone involved. That includes myself, my staff, and all of you. Because without any of those things we don't exist.
The kind words I have received today have really buoyed my resolve in that what we are doing, what we strive to be, and where I want to take this. It made me realize this means so much more than I realized, not only to myself, but everyone involved.
So, thank you. From the bottom of my heart.

So I have always promised y'all we'd always be open and honest and this is no different than any other time. Being a business owner means we make many decisions, many times ones that weigh on us and whether or not we are doing the right thing for everyone, including our guests.
I want to be upfront in that you will see a small price increase on the new menu almost across the board. I worked at making it as minimal as possible, but it is there.
I'm working towards finally offering PTO and benefits for our staff and this is a piece that heavily plays into being able to offer these things. This includes insurance for myself and my child Vic who is a T1 Diabetic. I'll be honest, I am 44 and have never had health insurance, not even once in my life. So this is a huge thing for me and my kid, most importantly Vic.
I get price increases, especially right now, are tenuous at best. But I do believe that what we are doing is still at great value and being able to get all the people who make this magic happen every single damn day to a better spot has always been the goal. That has not changed.
As always, I'm open to critique, so if anyone has issues please message me directly, we don't grow and learn without feedback. But I hope everyone understands the why and what we are aspiring to do.

Obviously this is less than ideal. I may or may not have the oven working but I literally just got it lit to test it out. And we're at least an hour out of heating everything back up if it does heat up.
I've tried my best, but I'm going to call it for today. For my own sanity and my staff's.

So we are closing for a bit so I can work on getting us back up and running full bore.
