Nathan was an artist who worked with found objects, beginning with wood and moving to different types of metal that he unearthed with his metal detector.
In this mosaic you’ll see wood, year book scraps and broken mirrors as well as many other hidden images.

The World Butchers Challenge is a global butchery competition with teams from all over the world competing in what they call the “Olympics of meat”. Canon participated as the host of the opening gala event for the competitors and was the Chef Judge at the competition, held at the Golden One Center.

Today is Canon’s 5 year anniversary! We are so grateful to reach this milestone. We owe a debt of gratitude to our amazing team — many of which have been with us from day one. We also could not have done this without our wonderful guests. Thank you for supporting our vision for a neighborhood restaurant that ties together approachability and fine dining. Our goal was to share creative and adventurous cuisine in welcoming environment. Thank you so much for embracing us! Here is to many more years! The season is changing which means our Summer Tamale with Truffles is soon to be gone. This beautiful dish features Rue & Forsman Rice that is steamed in a tomato and corn broth, then mixed with creamed corn and brunoise piquillo peppers. This mix is then rolled in corn husks. Before serving the corn is basted with an “elote” stock (made from corn, tomato, onion, chili, and seasoned with Tabasco) and then topped with a squeeze of Black Truffle & Huitlacoche Soubise, Corn Veloute Espuma, and shaved summer truffles from Velarde Foods.

Our California Halibut Crudo dish features cured halibut drizzled with spicy peanut & chili oil and a sherry vinegar that has been aged for 50 years steeped with toasted rice, orange peel, and pickled wasabi. It’s served with fresh santa rosa plum, japanese cucumber, red frisée mustard, and sour peanut crumble.
Summer is one of the most inspiring times of the year. In this dish, Summer Squash from Patrick’s Garden is showcased along with a smoky Baba Ghanoush, seared Jimmy Nardello Peppers, and Cranberry Beans tossed in a relish of Preserved Lemon and Kalamata Olives.
