We’ve been loving this this winter season!

Mille Feuille, meaning “a thousand layers” in French, are traditionally made with puff pastry and vanilla cream. We embraced the seasonality of apples and butterscotch and gave this dessert a brand new spin. Layers of apple gelée, caramelized apples, puff pastry, butterscotch cream, and milk chocolate are surrounded by a sauce we affectionately call “Jolly Sauce”, because it tastes like the classic green apple Jolly Rancher!

We love butterscotch here at Farallon, and through lots of trial and error, have perfected the butterscotch cream that adds just the right amounts of sweetness and bitterness. The recipe is so precise, it must be cooked to an exact temperature, down to the very degree.

This Mille Feuille has been called a “sexy apple pie” and we couldn’t agree more!
