Not sure what to cook tonight? It's not too late to come by for all the ingredients you need for a CHICKEN PARMESAN meal tonight!

4 boneless chicken breasts, pounded to 1/2 inch thickness
1 egg
1/2 cup milk
seasoned bread crumbs
2 to 3 tablespoons olive oil
8 slices mozzarella cheese, or more
1 jar (16 oz) spaghetti sauce
Parmesan cheese

Preparation:
Whisk together the egg and milk. Dip the chicken breasts in milk and egg mixture and then in bread crumbs. Heat olive oil in a large skillet over medium-high heat. Brown the chicken in the hot oil on both sides until golden, about 3 to 4 minutes on each side. Set chicken in a baking dish.

Slice 8 pieces of mozzarella cheese and put two on each chicken breast. Pour 1 jar of your favorite spaghetti sauce over all. Sprinkle with Parmesan cheese and a little more mozzarella and bake at 350° for about 25 to 30 minutes, or until bubbly. Serve with spaghetti, garlic bread and a nice green salad.

Easy, family-friendly recipe! ONLY 8 ingredients! Try it tonight!

HONEY - TERIYAKI CHICKEN
1/2 cup honey
2 tablespoons rice vinegar
2 tablespoons soy sauce
4 garlic cloves, minced
2 tablespoons peeled and finely grated fresh ginger
Coarse salt and ground pepper
8 bone-in, skin-on chicken thighs (about 3 pounds total)

Preheat oven to 475 degrees. Line a rimmed baking sheet with foil. In a large bowl, mix honey, vinegar, soy sauce, garlic, ginger, 1 tablespoon salt, and 1/2 teaspoon pepper. Add chicken and toss to coat. Transfer chicken and sauce to baking sheet.
Bake chicken, skin side up, basting occasionally with pan juices, until well browned and cooked through, 25 to 30 minutes. Serve chicken drizzled with pan juices.

Sometimes...the best comfort foods to eat are cooked in a Claypot! (you can use a Dutch Oven if you are without a claypot)
Enjoy!

Chicken and Chinese Sausage Claypot

1 Chinese sausage
4 chicken thighs – cut to bite size pieces
2 tbsp oyster sauce
1 tbsp dark soy
2 tbsp light soy
2 cloves of garlic, chopped
1 tsp cornflour
2 tbsp of rice wine
1 inch ginger, julienned
1 tsp of salt
½ tsp of pepper
1 tbsp brown sugar
3 spring onions, chopped finely
5 dried sh*take mushrooms, soaked in warm water for 20 minutes
2 cups rice
3 cups chicken stock

Mix the chicken with all the ingredients except the rice, mushrooms, spring onions and stock. Leave to marinade for at least half an hour.
Heat 1 tbsp oil in a wok and stir-fry marinated chicken meat for 1 minutes. Add mushroom slices, sliced Chinese sausage. Dish out and put aside.
Put the rice and chicken stock in the cold claypot and place it over a medium heat with the lid on. Bring to the boil and immediately reduce the heat to a low simmer, then leave the rice to steam for 15 minutes. The rice should be nearly cooked, with little holes in the flat surface.
Spread the chicken mixture all over the top of the rice, and put the lid back on. Continue to steam over a low heat for another 15 minutes, until the chicken is white and cooked through. Give it a few stir and sprinkle the spring onions over the top and serve piping hot.

BUTTERNUT SQUASH CASSEROLE
(GREAT FOR KIDS!)
SERVES: 6 TOTAL PREP & COOK: 40 minutes
½ butternut squash, peeled and cut into ½ inch cubes (2 cups)
2 tsp olive oil
¼ tsp. salt
½ lb elbow pasta
2 Tbsp butter
2 Tbsp flour
1 ½ cups reduced fat milk
1 ¾ cups cheddar cheese, shredded and divided

1. Preheat oven to 375 degrees. Toss squash with oil and salt on a foil-lined tray. Bake for 20 minutes or until tender, set aside.
2. Cook pasta for 2 minutes less than package directions call for; drain and place in a bowl with squash. Meanwhile, melt butter over low heat. Whisk in flour; cook for 2 minutes.
3. Slowly whisk in milk. Bring mixture to a boil; then simmer. Cook 3 minutes, stirring occasionally. Add 1 ½ cups cheese; stir until melted. Stir cheese sauce into pasta and squash.
4. Spoon into 6 greased individual ramekins. Sprinkle on remaining cheese. Bake 10 minutes.
