Employee Spotlight: Lua Ragatz

Born in Brazil, and raised in Los Angeles, Cafe Monarch and Reserve's pastry chef is deeply passionate about her craft and is an avid reader who enjoys hiking, gardening, and the occasional game of paintball or Dungeons and Dragons when she crafts delectable works of art. We get to know more about Lua.

What do you do at the restaurant? Take us through your day.
The day starts at 7 am and begins with taking inventory which is used to structure our day. Then the real fun begins with the production of various breads, chocolates, and confections. Alongside my partner in pastry, James Haaby, we are constantly playing with new flavors and embracing the seasons with the sole desire to provide the most memorable culmination to any meal at Cafe Monarch and Reserve.

What are you most passionate about? Ever since I was three, pleading to watch the “pretzel lady” at the Grove twist dough for hours, I have been enamored by the art of pastry and bread. My passion lies in the human moments we get to share when preparing and sharing food. As Virginia Woolf put it, “One cannot think well, love well, sleep well, if one has not dined well.”

What is your favorite dish and why?
The venison! One bite and I knew Cafe Monarch was where I wanted to be.

What is your favorite drink and why?
The El Camino is my favorite because I'm a lover of smoke and honey. The bartenders at Cafe Monarch are so talented and passionate, that there’s sure to be a tonic to please any palate.

What is your favorite part of working at Cafe Monarch?
The creativity that permeates every day is palpable and inspiring. From the love and attention that’s poured into every dish to the overall care that’s given to every guest experience, Cafe Monarch and Reserve are truly one of a kind.

Join us at Reserve Scottsdale for a one-of-a-kind one-time event on Wednesday, April 4th at 6:30 pm with Memento Mori wines featuring a unique tasting menu accompanied by pairings from the Napa winery along with unique insight and exclusive access to the rare wine.

Memento Mori's production currently stands at only 2,000 cases, sourcing grapes from some of Napa's highest-profile vineyards, such as Beckstoffer Dr. Crane and Beckstoffer Las Piedras, along with Oakville Ranch, Vine Hill Ranch, and Weitz.

There are just a handful of tickets available for this unique experience featuring a special tasting menu curated by Chef Ben Wald and the culinary team at Reserve.

"Deep, dark ruby-red color is almost opaque. The dark-fruit aromas are tight & restrained, then layered with notes of coffee & cedary oak. The palate has nice freshness & lovely supple fruit. Acidity is balanced & the structure comprises plentiful grainey oak tannins, they are perhaps a little astringent on the mid-palate. Alcohol is balanced, the finish is fresh & it has good length."
