It’s official the WEU building is sold! Laura Aubrey-Cook and I are officially retired! It’s bitter sweet, but the new owner Bill Crawford from New England Apiaries will be a great fit for the property and the town of Southwick!
We want to thank, the town of Southwick, our friends, family and our many amazing clients for the year’s of fun, adventures and support!
We began WEU 42 years ago with the dream of providing a place, people could learn about the outdoors, others and themselves! I believe we have accomplished this goal.
Our next chapter involves, still running WEU travel and being Grandparents!
We wish you all well , with hugs and gratitude we thank you!

I am humbled by the outpouring of well wishes, compliments & even testimonials from our WEU families over the past few days. Part of our dream was to make a difference, the rest was to teach and prepare the next generation.
We were having so much fun, that we ended up preparing a second generation. I am grateful for all that I have learned about being part of a nurturing community. Thank you All!

Dear Swim Families,
It has been a very difficult decision, but we here at WEU must announce that we will be closing our doors and concluding pool programming. This includes swim lessons, scuba lessons and other pool based programs. We had hoped to continue keeping swim lessons open this fall, but with the property sale now finalizing, it is time to retire.
We are grateful for the support of our WEU families over these past 20 plus years here in Southwick.
We WILL be running September swim lessons. The schedule will be open for families to use up their current/previously purchased credits and unexpired packages with us. The utilization of lesson credits must be completed by September 30, 2023, any unused lessons or partial packages will be void after this date.
September lessons will open this Monday August 21st by 8pm.
We appreciate your support, understanding, and patience. This has been a very difficult decision for our family. We know the adjustment will be a challenging one for many, ourselves included. Thank you again for learning, growing, and swimming with us.

I love potatoes. I mostly eat mine with some olive oil after roasting in my air fryer. Salt and pepper of course, and perhaps a dusting of grated pecorino.
Potatoes are rich in vitamin C, which is an antioxidant. They were a life-saving food source in early times because the vitamin C prevented scurvy. Another major nutrient in potatoes is potassium, an electrolyte which aids in the workings of our heart, muscles, and nervous system.
Of rice, pasta, potatoes, and bread, potatoes are the healthiest of these starchy and complex carbohydrate foods. This is because potatoes are dense in nutrients, containing essential minerals, vitamins, and other micronutrients. Potatoes are also high in fiber, helping to satiate hunger and regulate blood sugar.
It is safe to consume potatoes every day as long as you cook them without much salt or saturated fats. One medium-size potato can be part of a healthy diet. It doesn't increase cardiometabolic risk and the chances of having diabetes and heart disease.
